After living in Norway for almost 12 years, I’ve never cooked Julemat “Christmas food” to anyone but my family. Well the kids are Norwegian but that doesn’t count....😏 Anyhoo, this past weekend I took up the challenge of serving traditional Norwegian Christmas food. From lutefisk, pinnekjøtt, svineribbe and all the side dishes!
For those who don’t know, Lutefisk is dried cod that has been soaked in a lye solution for several days to rehydrate it. It is rinsed with cold water to remove the lye, then boiled or baked, and then served with butter, salt, and pepper.
This is my second year of making lutefisk and they say you’ll start liking it after 7 years ...... that’s a pretty long time to try and like this Scandinavian delicacy!
I do however prefer to steam my lutefisk and serve it with a shallot infused pea purée, crispy bacon in loads of butter and cumin foam.
I got loads of compliments, now if only I could get to like it! 😏
