The Simplest Tomato Pasta Sauce. Initially this might not have the wow factor, but once you’ve read on hopefully you’ll change your mind! Using just 5 ingredients, this is the most versatile sauce you will ever have the pleasure of throwing together. I use it on plain pasta for the children. Add chicken or prawns. Add spinach, peas or broccoli as well as or instead of the chicken or prawns. Use it on top of halved pittas, tortillas or flatbreads, add grated cheese, mozzarella and any other toppings you fancy and you have homemade pizzas. Make or buy meatballs, colour them then add this sauce. Add some chorizo and a sliced red pepper to a pan, add this sauce, wilt in some spinach, make wells and crack in some eggs - delicious brunch! The opportunities are endless. Basically, if you have a batch of this in your fridge (which will keep for a good week) you will always be able to throw together a quick nutritious meal. Get your children to make it. It’s a good staple - I taught the children at my cooking demo to make this and they loved it.
INGREDIENTS for 6 servings
1 tbsp olive oil
2 red onions chopped
3 garlic cloves crushed
2 tbsp balsamic vinegar
800g chopped tomatoes or Passata
Soften the onion in a large pan over a low-medium heat for 10 minutes. Add a good sprinkling of Maldon salt to stop the onions catching.
Add the garlic, stir then add the Balsamic. Let it bubble for a minute then add the tomatoes. Add some black pepper and simmer for 20-30 minutes.
