I cannot sing the praises of this dish enough. Edamame pasta is a thing, just fyi. Lower in carbs and way higher in protein. With mushrooms, onions, parmesan, and beefless ground meat sauce. 390 calories in total for this entire bowl.

Restaurant hack alert! I have to admit when I go to a Mexican restaurant I have NO self control when it comes to chips and salsa/guac, I will eat and eat and eat it all! I have started to ask for cucumber slices OR I bring my own if they don't have cucumber on the menu. Veggie farfalle and meatless crumble!! It was delicious! Paige and Hunter loved it too!! It makes it so much easier to eat everything plant-based since the kids like it too.

I was so hungry tonight and wanted something delicious and quick. The macros are super low (partially due to the noodles), but this meal was still so filling!! 38C/3F/30P and only 277 calories😍🍜🥦🥢
Ingredients:
▪️38 g thinly sliced shiitake mushrooms
▪️179 g broccoli ▪️90g seitan
▪️1 package Miracle Noodle Pho Shirataki Noodles

Directions:
1. Add sliced shiitakes to a hot pan and allow to sear. Remove shiitakes and add seitan. Allow the seitan to sear on all sides.
2. Steam broccoli and set aside.
3. Prepare the Pho based on packaging: add noodles to the pan with sauce and water and let cook for about 4 minutes.
4. Pour pho and noodles into a bowl and top with the vegetables and seitan. I also topped it with some Asian chili garlic sauce for some added heat!

Day off from work = making time to be in the kitchen cooking a healthy meal and lunch prepping for the next day 🙃 .
I made my teriyaki seitan recipe, sauteed some baby bellos and bok choy, chopped up a handful of cilantro and one tomato, and plated those with some cooked tri- colored quinoa. Sesame seeds completed the dish 🙄 really good. Not shown but I added a drizzle of sriracha as well 🍜 Hank isn't vegan but he thinks the teriyaki seitan has a good flavor and texture 💏 I have the recipe for my teriyaki Seitan recipe up on my blog. So I bought a different flavoured #plantbasedprotein powder to try - this one is berry flavoured 😍 and thought why not pop it into my #proats for a yummy variation! .
Macros, calories and nutritional deets are shown 👉 this one is pretty well balanced - could reduce fats by eliminating the delicious coconut yogurt @coyo_is_coconuts on top - but frankly, who wants to do that?! 🙊

Yesterday I started scrolling through photos from the past year, and found myself obsessing. Though I’m feeling amazing eating a plant based diet, the protein is a struggle, which means the muscle is a struggle.

If you find yourself feeling down about your pre-summer body or how you used to look, stop and breathe. Figure out what you were eating at that time and take baby steps to get it back. Just know you aren’t alone in your feelings.

Most people who have known me for a while, know that I can PACK the food away when I am hungry. This day I ordered the french toast, a smoothie bowl, a fried tofu egg, and a turmeric latté (two mains and a side). This is completely normal for me - when my mood is in check....

Here’s the dirty secret about me, as much as I loveeee food, the moment my mood fluctuates to sadness, stress, anxiety, worry, frustration, etc. that love goes out the window and I eat simply for fuel, I eat whatever I can bare to stomach, and that’s it. My appetite is GONE bye bye. I know that for most people, food brings comfort to them during these times and it’s when they often have the complete opposite reaction, they overindulge. I WISH, so badly, that this was me too. I am constantly at battle with my metabolism, I NEED to eat quite a bit in order to maintain weight or gain weight. When I go through these low points I lose weight quickly, and it becomes scary for me. ———————————————
Here’s the thing, I don’t talk about this often or with many people because I fear the backlash and misunderstanding surrounding it. NO, I do not, and have never had an eating disorder. The only body dysmorphia I suffer from is believing I am never BIG enough, I often feel too skinny or small. Even when I am in these low points, I’m upset further because I can’t get my appetite to increase. I have to work hard and chose foods that are high calorie in order to correct the imbalance, until I feel better again. ———————————————
Life isn’t perfect, we are not perfect, this is my struggle, I just hope by sharing it someone can relate on some level too and know they are not alone. Find strength in your struggle. 💛✨
