Today is Day 1 of my Espira Boost challenge

It's no surprise that being a SAHM of three little girls is stressful and if you've read my previous posts you know I struggle with anxiety and depression. A slow and steady weight gain has been a negative result of that so I'm making some big changes to bring peace, calm and wellness to my life. Its a little hard to notice from the picture but its a pretty gloomy day today, but its ok because I actually find it really relaxing. And of course to add to how relaxing it is you cant go wrong with enjoying some chocolate and peanut butter as well. Today was also leg day, sort of, I did kind of a full body workout but a lot of it was legs too. I dont know why but on my second leg day Iโ€™m always really tired to a do a hard leg day. Its whatever though, as long as I got in a good workout. Have a good day! And also do those pull ups!

Homemade seitan is one of the recipes I started using when we were eating plant-based, and I still love it. when Nanima gives you loads of leftovers for lunch ๐Ÿ˜๐Ÿ˜ you probably donโ€™t know as my skin colour is quite light (as my dads side is all english) that my family is originally from India! My Nanima grew up there and then later moved to Kenya where my mum grew up, so Iโ€™m partly Kenyan too ๐Ÿ˜Ž my Nanima is alllllways cooking and as she is mostly vegetarian (due to health reasons) she always makes me vegan dishes (which is basically just her veggie dishes but she uses oil instead of ghee)๐Ÿ’• today she make me lentil dhal, rice and a load of this spicy chickpea curry sorta thing (which I canโ€™t remember the indian name for ๐Ÿ˜‚), sheโ€™s honestly such an amazing cook and all her dishes are so flavourful (her spice cupboard is literally a maze๐Ÿ˜‚๐Ÿ˜‚) PS. Yes I ate it out of the Tupperware she sent it in because saving washing up you know ๐Ÿ˜Š UPDATE: @eatbeautiful._ has reminded me and the chickpea thing is called channa masala๐ŸŒฑ

As transplant patients, weโ€™re asked to maintain a healthy lifestyle, weโ€™re given guides on how to manage our health but most times, we slip because thereโ€™s no one to support us through this stage.
Maintaining a healthy lifestyle is simply guesswork on our part. Weโ€™re told that we can return to a normal-ish #lifestyle but we know what that is. Weโ€™re mostly happy anyhow. No more dialysis, no more needles, no more hours on the machine or our lives revolving round our treatment.
Maintaining a routine might help so the following should probably give us a kickstart.

Breakfast at our house today was oats 2 ways. These blood sugar stabilizers are a great way to start the day and their fiber content keeps you fuller longer. I had Peach Coconut Oatmeal which was a delicious and simple twist on โ€œnormalโ€ (aka boring) oatmeal, and Jade had Banana Oat Pancakes (swipe right). We blended down our @onlyoats.avenafoods to make oat flour. My little chef was pretty proud. Happy Friday! You did it, we did it, another week in the books ๐Ÿค™๐Ÿผ I donโ€™t get to show off my lunch most days since Iโ€™m at work, but yesterday I had my typical lunch for dinner instead. This is just a bowl of brown rice, chickpeas, avocado, and teriyaki sauce. I also usually throw in some mixed veggies but I was feeling lazy last night. I woke up super early this morning, probably because I went to bed before 10 oโ€™clock for the first time in a long time. So, naturally, when I woke up I was STARVING and I wanted to make something fast with what I had. The result was this high protein maple cinnamon breakfast quinoa. Since oatmeal is on my list of things I canโ€™t eat, using quinoa was the best alternative! Scroll down for full recipe!

Ingredients:
* 1/2 cup uncooked quinoa
* 1 cup cold water
* 2 teaspoons cinnamon
* 2 teaspoons vegan butter
* unsweetened almond milk to taste
* sugar free maple syrup to taste
* 1 Apple for garnish

Directions:
1. Place quinoa in water and rinse well.
2. Drain quinoa, then stir in 1 cup of cold water, 2 teaspoons cinnamon, and half the amount of butter.
3. Microwave on high for 4 minutes. Stir and microwave for 3 more minutes. Remove from microwave.
4. Cover with foil and let sit for 2 minutes. Fluff quinoa and stir in remaining butter.
5. Top with almond milk, sugar free maple syrup, apple slices, and cinnamon.
6. Serve & enjoy!

Here is a chocolate chickpeas blondies ๐Ÿ˜Š. Tdy while scrolling through instagram, I saw a post about the benefits of cacao and realised that it can really be qualified as a 'superfood'. ๐Ÿค”๐Ÿซ First of all, it is high in magnesium. Magnesium is an essential minerals that helps in maintaining a healthy heart and also improves mood and combats fatigue.
Secondly, cacao is a good source of calcium (who says that u only get calcium from consuming cow's milk?!!). It has a higher amount of calcium compared to milk. 100ml of milk contains about 125mg of calcium, while 100g of cacao contains 160mg of calcium. ๐Ÿ˜š

Thirdly, cacao is the Amazon's antioxidants king. Believe it or not, it has about 40 times more antioxidants compared to blueberries!! ๐Ÿ˜ฑ
Lastly, it is a rich source of iron. Actually, it contains the highest amount of iron in all plant based foods. It has a whopping 7.3mg of iron per 100g, compared to spinach at 3.6mg and lamb at 2.5mg.๐Ÿ˜Ž Who will know that such delicious foods are actually healthy and good for us? ๐Ÿ˜

Coconut milk is just great.
In Thailand last year I tasted so many amazing recipes with it.
In Italy is not very common to use it, but itโ€™s becoming a little more popular.
When I found a coconut milk can in a local organic shop, I took it right away to try a new recipe.
Tempeh, zucchini, giant green beans (I donโ€™t know their name in english), carrots, a bit of spices and coconut milk.
Test successful. It was pretty great.

โ€œBut where do you get your protein from...?โ€ Does this sound familiar? This is one of the MOST common questions I get for being vegan. Thereโ€™s this common idea that protein only comes from meat. But guys, plants HAVE protein. Also, the thing with protein is that is built from blocks called amino acids. The body breaks up the protein from food to get these essencial amino acids, and then builds it up again in the form of muscle. When you eat meat, youโ€™re basically eating the โ€œmuscleโ€ from an animal, which means you already have all the essential amino acids right there. However, it also means thereโ€™s so much more to break up and it will take more work to the digestive system (does it sound familiar to feel tired after a big meal with meat?). Not to mention all the toxins, hormones and saturated fat that comes with that animal source of meat.
When it comes to plants, it is important to eat a variety and combine strategic foods to get all the essential amino acids. Thereโ€™s some exceptions like quinoa, buckwheat and tofu that have all amino acids needed. Apart from that, it is important to combine foods like grains with legumes and nuts to ensure youโ€™re getting the right nutrients. Not only these will be easier to digest, but the majority of these foods will be accompanied with so many more amazing nutrients for your body!๐ŸŒฟ

Cumin-fried buckwheat with crispy turmeric chickpeas, oven-roasted aubergine and quick-pickled red cabbage. Mmmm mmm mmmmmmm ๐Ÿ˜ Friends, this is a goer, and a great way to use plain batch cooked produce, like buckwheat and oven-roasted tomato soup (both of which I made earlier this week), in a new, delicious way. Iโ€™m not a massive fan of buckwheat, so trying to think of different ways to use it. I love cumin fried rice, so thought Iโ€™d try it with plain cooked buckwheat and itโ€™s a winner! Simply fry cumin seeds until fragrant, toss in the buckwheat, add a pinch of garlic granules and Himalayan pink salt and continue to fry lightly for a few mins. Done. The chickpeas were drained and rinsed from the can and tossed in turmeric, cumin powder and pink salt and placed in the oven for 20-25 mins. Aubergine was sliced, tossed in a little olive oil and roasted for 25 mins. I also chucked sliced onion into the oven as well. The quick pickled red cabbage adds a fresh dimension and is simply thinly sliced red cabbage left in a bowl with apple cider vinegar, pink salt and garlic granules, and stirred every now and then to ensure even coating. To serve, I plated up and served everything with a little of my oven roasted tomato sauce made earlier in the week (heated up), tahini, and green salad leaves.
