I love cooking brunch for friends on the weekends and always want to pull out a showstopper without having to spend a fortune on ingredients or the whole morning faffing in the kitchen. Simple lunch sweet n sour Daal palak with steamed rice.
Recipe: soak pigeon pea split daal n green gram daal for at least 1 hr. Now heat ghee/ clarified butter in pressure cooker, add cumin seeds, asafoetida, garlic, chopped onion, tomatoes one by one saute it for 5 min. Now add red chilli powder, turmeric and coriander powder. Saute it now add chopped spinach let it cook for 5 min. Now add soaked daals, water, add salt n jaggery. Cover the lid and cook it for 3 whistles, simmer it for another 10 min. Switch off the gas. Open the lid and add some water to adjust the consistency. Let it boil for another 5 min. Now make a second tadka. Heat ghee in small pan add cumin seeds, asafoetida and dried whole red chillis. Switch off the gas. Add this tadka to above daal. N let it cook for 5 min.

I’m not really a fan of fruit, but I made this DELICIOUS bowl of melon, cashews, coconut sugar and coconut yoghurt! 🥥
A huge fan of keeping it simple 👌🏼
You only need a tiny sprinkle of sugar because it just dissolved into the yoghurt to form a sweet creamy dessert-like texture 🌟

RECIPE: SMASHED AVOCHICKPEAS SANDWICH ✨ From @fivesechealth

You may see me eat tons of fruit based meals (mostly because it’s delicious, warm climate and I take advantage of the cheap prices) but some days I crave savoury meals like this one! SOURDOUGH + AVOCADO, whaaaat a match 💚
I added some chickpeas to make this meal more protein rich and it worked out amazing!
The recipe is in my recipe app (link in bio) and down below:

RECIPE SMASHED AVOCHICKPEAS (2-3 servings)
- 2 avocados
- 1 cup canned chickpeas
- 1/2 red onion
- 1 tbsp lemon juice
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 1 dash garlic powder
- 4 slices of whole wheat sourdough bread or whatever bread you like

STEPS:
1. Mash the avocado together with rinsed chickpeas, the spices and lemon juice
2. Add minced red onion, combine
3. Serve on bread slices topped with sliced cucumber and coriander!

So this was dinner last night and tonight. I was feeling really terrible a couple days this week but pushed myself through work, went out Friday and worked yesterday. When i left work yesterday there was a parade going down Michigan ave, and I have to cross it to get home..... I was forced to wait until it was over and the streets were opened to get home. After that bull shit 😣 and almost getting in to argument with a CPD officer. I made dinner and went to bed. I must have been really exhausted , I did not get up in the night at all and slept 12 hours. Today I got out, did some walking and shopping up north. Tracking has been good the past couple days and tomorrow I have some other stuff That needs to be taken care of. But pictures here is a #tofuscramble with broccoli, peppers, onion and mushrooms, with potato, half an avocado and 2 @fieldroast breakfast sausages.🌿——————————

Slow Cooker Sunday: Red Lentil Chili Edition. Chop up half an onion, 4 garlic cloves, a red pepper, a green pepper, and some mushrooms. Add to the slow cooker. Toss in 1 cup of red lentils (rinsed and drained), 2 cups veggie broth, 1 cup frozen corn, 1 can of black beans (rinsed and drained), 1 can of spicy chili beans (with liquid), 1 can of diced tomatoes (with liquid ), 1 TBSP chili powder, 1 TBSP cumin, 1 TSP paprika, and 1 TSP oregano.
