Apple pie recipe! 🍎🍎🍎
- FOR THE CRUST:
- 2.5 c flour
- 1 tsp salt
- 1 c vegan butter I like earth balance the one on the pink container - ΒΌ c coconut oil I used a milder one ( some have a more coconutty flavor which I love for certain recipes - 6 Tbsp ice water
- FILLING:
- ~12 c apples, peeled, cored, and sliced about 1/4 inch thick - 1 Tbsp coconut oil - juice of half a lemon - Β½ c sugar I used coconut and fine cane sugar - 1 tsp cinnamon
- a pinch pinch of pumpkin pie spice - Non dairy milk and coarse sugar for the top of the crust - prepare the crust, at least a few hours win advance.
- Sift together flour and salt.
- Slowly add the butter and room temp coconut oil
- Sprinkle mixture with ice water one tablespoon at a time, stirring gently after each addition, until dough comes together into a ball. I did this in a standing mixer on low with the dough attachment. - Divide dough into two equal parts.
- Shape each half into a disk, wrap tightly in plastic. Refrigerate - When you're ready, roll out both disks and arrange one in the bottom of a 9" pie pan. Because I used coconut oil, and this solidifies when cold, unlike other crust you will have to let it sit out a few mins before your roll it out, another oil will work I’m sure, but I used what I had. - For the filling - Melt coconut oil in a very large skillet over high heat.
- Add apples and toss to distribute butter.
- Reduce heat to medium and cover tightly.
- Cook, stirring often, for 5 minutes.
- Stir in juice, sugar and spices.
- Increase heat to high and cook, uncovered, until the liquid reduces slightly (2-3 minutes).
- Transfer apples to a bowl and allow to cool - Preheat oven to 350F.
- Fill bottom crust with apple mixture; it’s ok if it’s a little high the apples will cook down a bit - Arrange top crust as desired, making sure to seal the edges and leave slits or other openings for steam to escape. I attempted the braided method lmao - If desired, brush crust with non dairy milk and sprinkle with coarse sugar (for color and texture).
- Bake for 30 minutes.
- Without removing pie from oven, increase heat to 400F and continue to bake for 10 minutes more.

Steamed sweet potatoes, sautΓ©ed zucchini/squash, green beans, and a bunch of organic greens. Love a veggie bowl!!! I made a doctors appointment for next week to get my hemoglobin and iron stores(ferritin) checked out. Have any of you had low iron on a plantbased diet? Did it ever become a problem? I am having symptoms of it and may need to supplement...or even modify my diet a little. Always listening to my body and seeing what it needs. Curious if any of you have low iron?πŸ€”

Ok y’all, so I tried my hand at another (VEGAN) pizza! πŸ• This one is Balsamic Roasted Veggie Pizza and it’s completely #vegan & #glutenfree ...it was tasty buttttt let me just say that I’m not the biggest fan of mock cheese. Yeah, it’s a no for me dawg. πŸ˜‚ I’ll be trying this again with NO β€˜CHEESE’. Try it for yourself though! πŸ‘©πŸ½β€πŸ³

Happy 2nd Vegaversary! 🌱 Two years ago today, I turned in an assignment for my Visual Communications class. I created an "informative video game," and the topic was "Vegan Cooking for Kids." The research and the recipes resonated with me, and that was that! πŸ™ŒπŸ» I'm out of practice with Adobe software and coding... but, I've saved: 803,000 gallons of water and 29,200 pounds of grain and 730 animal lives πŸ’š That is a way cooler outcome, if you ask me πŸ€·πŸ»β€β™€οΈ ---------- πŸ“·: LD2B (thank you for taking "just one more" 7383738 times)

Baked eggplant and zucchini with "mozzarella" and pesto, before it went in the oven. I sure wish I could show you the after picture, but we just had to eat it! I'm so grateful for some of the amazing dairy-free cheeses that are appearing these days. This one is from @miyokos_kitchen, a favorite, and to be able to enjoy gooey, cheesy Italian again is such a treat!

Here's a basic recipe:
Slice eggplant and zucchini, ideally with something like a mandolin, but at least so that they are evenly thin slices. Then put a little of your favorite tomato sauce in the bottom of a small baking dish, layer in some of the eggplant and squash, hit them with a little salt, and top with mozzarella and pesto. Repeat, making sure you have some sauce, cheese, and pesto for the top. Bake until it looks like something you'd like to eat, maybe 30 minutes. Let cool slightly, then gobble up.
