Nothing but a delicious buddha bow can calm your nerves. Recipe: 4-5 cubed golden potatoes -1/2 container mini portobello mushrooms sliced 1tbsp everything bagel seasoning 1tsp minced garlic Pinch of pepper *heat skillet on medium with 1 tsp minced garlic. Add potatoes and pour in filtered water until bottom of the pan is covered. Place lid on and let cook until all the liquid is gone. Remove lid cooking potatoes until brown, flip occasionally. About 5 minutes. Add mushrooms, seasoning and toss, cook until mushrooms are browned and potatoes are soft. While that’s on the stove chop up some kale and massage with 1/2tbsp high grad EVOO, 1tsp ACV and everything bagel seasoning. Add 1/2C microgreens, 1/2C chopped broccoli and toss until all is coated. Plate potatoes, mushrooms, salad and top with 1/4 avocado and a sprinkle of sea salt!
