The moment you’ve all been waiting for....PUMPKIN SPICE BREAD! Gluten free, dairy free, & sugar free!!! This recipe is also full of protein. My goal when I create these recipes is to keep it simple and only include clean ingredients. Soooo here it is:
1/2 cup cassava flour
1 cup pure pumpkin purée
1 1/2 scoops @mliscompany vanilla protein (or any vanilla protein)
1 scoop @bulletproof collagen protein
1 tbsp apple cider vinegar
1 tsp baking soda
1 tbsp pumpkin pie spice (more if you love that spice flavor)
2 tsps cinnamon
Preheat oven to 350F. Mix the baking soda and apple cider vinegar in a bowl and let it fizz. Add the eggs and mix until well combined. Add the rest of the ingredients. You can use a kitchenaid, hand mixer, food processor, or mix it yourself. I used a kitchenaid stand mixer and it worked out great. Pour the batter into a greased loaf pan and bake for about 45-55 minutes. Check the middle of the batter after 45 minutes to make sure that the inside is cooked!
That’s it! I found that the vanilla protein powder added a great sweet taste! You don’t need any other sweeteners when you use it.
