Pudding + Pumpkin = Autumn Love!!
This little treat is the perfect afternoon pick-me-up and the recipe makes 4 servings! Enough to last you through 4 days worth of those sweet tooth snack emergencies!
2 cups milk of choice (I use unsweetened coconut)
1/2 cup chia seeds
1 cup pumpkin puree (NOT pie filling!)
1 TB pumpkin pie spice
2 tsp vanilla extract
3 TB pure maple syrup
In a large bowl, mix ingredients together. Pour into 4 small mason jars or bowls. Cover and refrigerate for at least 3 hours or overnight!
Top with almonds, pecans, pumpkin seeds, coconut, cinnamon, whatever you love!
