Watch out Pumpkin, there’s a new gourd in town. Her name is Butternut Squash & she’s ready to challenge the #pumpkinspice trend. ...Okay, maybe I’m a little off season, but raise your hand if you don’t discriminate against winter squashes year round♀️. I mean for real, squash is probably one of my favorite vegetables. It’s so versatile- you can roast it with cinnamon, toss it in a salad, make it into a soup, spiralize it for noodles... or make this BUTTERNUT SQUASH BANANA BREAD with CHOCOLATE CHIPS??.
Okay, I know I’ve said this before, but this is #FORREAL one of the best recipe creations I’ve ever made. I made a loaf on Thursday evening, and it was so well-received that I had to make another loaf for a celebration I’m going to tonight. Best of all, it’s #VEGAN aka #dairyfree and #oilfree can easily be made #glutenfree & #refinedsugarfree to suit all your dietary needs. Okay, now let’s get to what you actually came for.
THE RECIPE: (Tag me if you try it!)
Preheat oven to 350F.
Combine dry ingredients:
2 cups flour: I used one cup all-purpose & 1 cup oat flour, but you could easily use 2 cups of flour or oat flour or gluten-free flour... the choice is yours
2 tbsp @splenda sugar & stevia: you can sub coconut sugar, pure maple syrup, etc. but I’m not 100% sure of the proportions so I suggest using Google & your own judgement
1tsp baking soda
1 tsp baking powder
Dash of salt
1 tsp (each) cinnamon, ginger, and nutmeg.
Add all wet ingredients to dry & then combine:
1 1/2 mashed overripe bananas
3/4 cup canned butternut squash
1/3 cup unsweetened applesauce: you can sub oil if you’d like.
1 vegan egg substitute: I used 1 tbsp milled flaxseed + 2.5 tbsp water.
2 tsp vanilla extract.
MOST IMPORTANT STEP: Chocolate chips!!! (You can experiment with refined-sugar free chocolate if desired).
Pour batter into a lightly greased 9x5 loaf pan (or a homemade aluminum foil pan if you realized you don’t own a loaf pan like me Check my insta story if you want a good laugh).
Bake for 35 minutes, and then turn off the oven & let sit for 10 more minutes in oven.
