CRISPY CILANTRO TURKEY HASH
.
INGREDIENTS:
.
1 lb organic ground turkey
1/3 C chopped cilantro
1/2 C sliced baby Bella mushrooms
3 T chopped shallot
3 T carrot chopped into tiny cubes (think the size of the minced garlic or chopped shallot)
2-3 cloves of garlic chopped/minced
1/2 C organic raisins
avocado/coconut oil (or oil of choice) for sautéing
garlic powder, sea salt, and @coconutsecretofficial aminos to taste

DIRECTIONS:
1. heat oil in your cast iron skillet on medium-high heat

2. add the shallot and garlic. sauté until shallots begin to become translucent.

3. add carrot and sauté 3-5 more minutes. we’re building flavor is why we’re not just dumping everything at once!

4. time to add the turkey. once added to pan, don’t touch! allow to brown, even crisp if you dare lol! once browned, flip to allow other “side” brown.
5. add mushrooms and raisins. season to taste.
6. add cilantro, leaving a bit aside for garnish at the end.
7. you could eat this with sweet potato “toasts” and some avocado in the mornings, or over cauliflower rice with a lime wedge for a yummy bowl. options are endless. enjoy! #paleo #foodismedicine #aiprecipes #cleaneating #quickpaleomeals #skillethash

always been a foodie! in this leg of my paleo journey, i’m having fun figuring out ways to enjoy my favorites & cravings with my own “paleo take”... i know, i know, sounds boring to some but i can look at this chosen food lifestyle as a jail sentence, or i can have fun with it!

pictured here is an #AIP take on a lunch I’d normally eat with a side salad, here i used an @applegate turkey burger, made my own simple salad w/homemade vinaigrette and OF COURSE avocado [healthy fat that helps me stay fuller longer - a MUST]. and ya know i still needed a “bun” and those who follow me have seen me making these sweet potato “breads” a LOT lately [in fact, they sorta been my hero while in Texas this week with the fam - see stories]. so there it is and they were a cinch to make! recipe forthcoming! meanwhile, we’re wrapping up what was a great camping trip here in Texas.... hope you’re having a #happyfriday too my friends!

Flip day OMAD! Some of the best meals are the "dump it in a bowl and hope for the best" deals. This was effing delicious. 10 out of 10 chance I'm making this again.

There's about 3 oz of diced baked sweet potato on the bottom, then 2 scrambled eggs, then about 3 oz of leftover Kalua pig (crisped up in the pan with some onions), then diced avocado & pepitas.

I topped with a drizzle of maple 🍁aioli (homemade paleo mayo with a wee bit of maple syrup & cinnamon).

Fresh out of the oven!

Chicken & dumplings (or biscuits). It’s a rainy afternoon & this is what I came up with for supper.
I pulled frozen chicken breasts out, baked them at 400 degrees F, until partially cooked/thawed. I then cut it into bite sized pieces. Added mixed veggies, broth, almond milk, arrowroot flour, salt, pepper & onion powder. Oh and I put a couple sprinkles of ‘everyday seasoning’ from the book ‘easy paleo Meals’. The biscuit recipe came from the book ‘Lexi’s Clean Kitchen’. I subbed earth balance margarine for the butter.

but on a serious note, spinach is definitely one of my go-to greens 🥬 ! of course it’s packed with all sorts of nutrients and has anti-inflammatory qualities. but you know me, I’m often about the convenience [hence the name #quickpaleomeals ] and a bag of spinach can be my salad or a quick side item by sautéing on the stove or popping in the microwave]. I think we can all agree that pizza is pretty damn delicious 🍕. Once upon a time gone by, I would eat a big fat doughy pizza every Friday night 😳. Whilst times have changed (thank goodness), the ceremonial art of pizza is not gone for good ~ it just appears in better, healthier forms

Whether it’s a meatzza (thank you @chefpeteevans), a cauliflower base or my new fav...#coconutwrap base, you seriously can’t go wrong 🥥

This recipe used 3 layered @jimalie_coconut_products wraps from @hillsorganics with organic tomato paste on top of each wrap. Topped with some spanish onion, mushrooms, Spag bol herb mix, and avo + hot sauce (after it went in the oven to crisp up) 👌 •

Had such a great workout this morning, it was much needed and I peddled but butt off! I was a little hungry when I got home, even though I had breakfast before my workout, so decided to make patacones again! ✨
I think I’ve finally mastered them. I attempted to make them a few weeks ago, and let the plantain turn yellow - which is more like tajadas or maduros (as most restaurants call them) which are fried sweet plantains. They’re good, but I like patacones so much more.

- One Green Plantain
- 1/2 cup to 1 cup of coconut oil (olive or avocado oil works too)
- Salt

Cut the tips off the plantain and then cut just through the peel down the back and start to peel off the outside. It’ll be a little tough but I find pulling off a strip at a time works best. Next, cut the plantain into 1 inch pieces.

Heat up your oil in a pan, I used about a 10 inch pan and place the pieces of plantain in the oil. Let it sit on one side for 3-4 minutes or until golden brown. Then flip and do the same thing. The oil should be 1/4 up the plantain (you don’t need that much oil so start with less and add more if needed).

After both sides are cooked take the plain pieces out and place them on a paper towel. Next use the bottom of a cup or glass container (I used a small pyrex) to press them down to your desired thickness. You can put parchment paper over the plantain while you’re pressing it down so it doesn’t stick to the container.

Put them back into the oil for about 30 seconds on each side, to golden brown. Place back on the paper towel, dab off the oil and sprinkle with salt.

Quick, easy lunch. I had chicken prepped from a few days ago and grabbed whatever was easy to add - @clekraut garlic kraut (SO GOOD), lemon hummus, a few @simplemills crackers, lemon-tahini dressing over a kale-brussel-cabbage mix.

Bacon 🥓 I don’t need an excuse to make it, whether it’s breakfast or dinner. And when it’s late and I need a quick dinner it’s an easy add to any meal. News flash though💥 bake dat bacon! Such easy cleanup and you can set it and forget it while you’re doing other things.

This is a super simple chicken, bacon, ranch salad. @wholesisters dump ranch, pounded and seared chicken, @applegate sugar free Sunday bacon and a mixed greens herb mix.
