You just got home from work. It's late, you're starving, and there is no cooked food in your fridge. Does this story sound familiar?

That was me a few nights ago. I needed to eat FAST so I put together this curried beef and veggie recipe off the cuff. It was delicious and only took 45 minutes to prepare!
1lb 85% grass fed beef
3-4 carrots
3-4 celery stalks
Fresh cilantro
1/2 red onion
2 TB grass fed butter
1 TB curry powder (or to taste)
1/2 fresh squeezed lime
Salt & black pepper to taste

1) Preheat cooking pan over medium heat.
2) Chop celery and carrots. Dice red onion.
3) Put butter in pan, add all other ingredients besides curry powder, salt, and pepper, and squeeze in lime juice. Cover. Stir occasionally, breaking up beef to ensure even cooking.
4) After beef is cooked through, add fresh cilantro, curry powder, salt, and pepper to taste.
5) Enjoy!

Shiritaki noodles (aka low carb spaghetti) with sausage and meatballs, sautéed spinach with sun dried tomatoes and capers on the side. I used Bragg's nutritional yeast on top as a dairy-free substitute for parmesan cheese.

The good part about grocery shopping in the U.S. is that we have SO many different foods to choose from. The bad part is that the majority of the middle aisles contain manufactured food-like substitutes that are highly addictive and shouldn't be consumed by anyone.

How can we differentiate between quality food and processed garbage? The expiration date! If the expiration date is further than a month out chances are it's not as nutritious as the produce, fruit, fresh seafood, etc. that spoils within days or a week.

The middle aisles are out to get us because most of what is on the shelves contain added sugar, high fructose corn syrup, harmful preservatives, and other unnatural additives. Steer clear of the middle aisles while grocery shopping as much as possible!

I finished cutting up and putting down the rubber mats for my gym thanks to my brother's help! Steve is the best and not on Instagram sooo don't tell him I said that haha.

Now it's starting to feel real since the space is usable for training. I'm going to start priming the walls for paint today. Painting is probably one of my least favorite activities besides running on pavement so I'm trudging through this part!

Mixed greens with carrots, red onions, celery, topped with walnuts.

Salad: this word used to stir deep seated disgust and displeasure in me whenever it was mentioned! However, I've found ways to get my leafy greens in regularly without gagging and feigning my own death shortly after.

The secret lies in the dressing! My go-to simple recipe is balsamic vinaigrette with pressed garlic, lemon juice from one whole lemon, and extra virgin olive oil. It's basic but it masks the taste enough for me to the point where I can almost say I enjoy eating salad. Almost!

I LOVE chocolate. Yes, as a nutritionist I eat dessert too but I am fully aware of the repercussions I face if I don't treat my body right!

Lindt 85% Dark Chocolate is my go to if I want dessert after dinner. Or lunch. Or in the middle of the day after gleefully eating 5 spoonfuls of organic peanut butter straight out of the jar...but I digress.

Cacao/dark chocolate is actually a SUPERFOOD! Benefits include protection from free radicals, lower blood pressure/fasting blood sugar, better cognitive function, improved cholesterol, improved heart health, and reduced risk of cancer.

However, there are many chocoholics settling for something disguised as chocolate that is totally unhealthy: sugar. If the number one ingredient in your chocolate is sugar, you've got a problem! There is no way in heaven I can respect you as a chocolate lover if you consider Hershey's Milk Chocolate "good" chocolate. It's mostly sugar with a dash of chocolate added in for texture/mouth feel--check the back of any low quality chocolate bar and the #1 ingredient will be either sugar or worse, high fructose corn syrup. Yuck!

In order to reap the health benefits of chocolate, buy bars that contain 85%+ cacao and ARE NOT processed with alkali (this reduces flavanols). Swipe left to check out the carb differences. Lindt 85%: 15g carb-6g fiber=9g net carbs. Ghirardelli 60% bittersweet chips 21g carb-2g fiber=19g net carbs. Hershey's Milk Chocolate kisses with almonds: 21g carb-2g fiber=19g net carbs.

How I spent my Friday night: cutting 3/4" rubber with a circular saw and hanging a new LED light strip in place of a florescent light from the 80s.

First 4 mats down, 7 to go! I can't wait to be able to move my weights over and be able to practice yoga downstairs. I've got a space heater built into the wall so hot yoga could be in the cards for the future. Who knows? One step at a time.

Creative lunch today: 85/15 ground beef over balsamic roasted Brussels sprouts with onions, mushrooms, and Dijon mustard on top.

Beef has been demonized lately for its high fat content. I don't see any problem with having grass fed red meat once or twice a week because it is very high in B vitamins and the brain requires fat to run optimally. Make sure to skip the bun and ketchup (too much corn syrup/sugar) if you're having a burger though. When carbs break down into glucose it will bind to protein and/or fat, leaving behind Advanced Glycation End products (AGEs). I won't delve into this further but to make a long story short: AGEs age you faster by shortening telomere length.

I love my morning cup of loose leaf gunpowder green tea!

Most days I skip breakfast and fast for 16-18 hours, enjoying my first meal around 11am-1pm.

Green tea helps get me going--it has just the right amount of caffeine and is rich in polyphenols. These compounds help reduce inflammation, reduce the amount of free radicals in the body (byeee cancer), improve brain function/protect your brain in old age, boost fat burning, and reduce the risk of cardiovascular disease. @the_center_for_higher_living

Not a tea drinker yet? Get on it, but skip the sugar! If you can't get by without a sweetener add 1 tsp of organic honey per 8-12 oz then slowly wean yourself off of it.

I'm finally turning my basement into a home gym! My goal is to be able to see clients here for personal training in July. I cannot wait!

This has been on my to do list since I moved in two years ago but I kept putting it off again, and again...and again. Yesterday, that changed.

The border nails in the concrete from the carpet are all pulled up and the concrete is clean--I'm excited to put down rubber floor mats. The walls are a mess but being able to put weights on the floor and be able to do exercises on it will be great.

Chicken sausage quiche before and after!

Quiche is my go to for breakfast or lunch because it's simple, versatile, and packs a nutritious punch! I used Aidell's chicken sausage as usual for protein but mixed it up on the veggies with organic broccoli, carrots, and red onions.

For seasoning I used nutritional yeast for a cheesy flavor instead of actual cheese per @maxlugavere 's book on #geniusfoods. I also love using #slapyamama seasoning in every quiche and normally add a dash of turmeric. Always make quiche at 375 or below to avoid damaging the nutrients in the eggs, veggies, and extra virgin olive oil (smoke point is around 400). If you cook quiche, what ingredients do you use?

Kielbasa pineapple salad with lemon garlic balsamic vinaigrette, walnuts, and feta. This is what happens when I'm starving and eyeing Memorial Day leftovers in the fridge!

So I know you're thinking: "what has he DONE?!" but hear me out on this one. Pineapple pairs well with kielbasa because the enzyme bromelain helps your digestive system break down proteins. I also used the bitter flavors from cilantro and celery to keep the sweet/salty taste in check.

This turned out to be a very filling meal, if you despise salad like me try this one out. I recommend holding the feta and walnuts though because there is plenty of flavor already!

Spinach tuna salad! I love tuna and have been playing around with ways to make it taste great without any bread. This fit the bill.

1. Sautée 16 oz spinach and red onions in extra virgin olive oil, juice of 1/2 lemon, and a splash of white wine. Cook on low to medium heat until spinach is wilted and green.
2. Drain and squeeze water out of 3 cans of tuna, add mayo (Primal Kitchen avocado mayo is good), and sliced celery.
3. Mix sautéed ingredients into tuna, add salt and freshly ground black pepper to taste.
4. Top with crumbled walnuts. Enjoy!

Nothing beats my mom's meals! Prime rib with horse radish dressing, mashed sweet & white potatoes, and asparagus.

I limit eating starchy carbs like white potatoes because they are high GI (glycemic index) and will cause a sharp spike in my blood sugar. Eating a diet consisting mainly of low GI foods is beneficial for anyone, not just diabetics.

Every time our blood sugar rises our pancreas secretes insulin to remove the sugar from our blood. If the pancreas is being activated constantly from high carb or sugar intake our body becomes insulin resistant. Insulin resistance causes increased hunger, lethargy, brain fog, weight gain, and hypertension (high blood pressure). If these symptoms sound familiar try limiting high GI foods such as white potatoes, whole grains, pasta, and bread. My breakfast of champions: bulletproof coffee, quiche, and avocado!

You'll never see any Wheaties or "breakfast grains" on my plate. This is because grains (whole or processed) cause steep spikes in blood glucose levels that will leave me feeling hungry, tired, and unfocused in a couple hours. Grain sources include bagels, oatmeal, cream of wheat, millet, and buckwheat. A great alternative to oatmeal is chia seed pudding with golden ground flax meal mixed with berries and raw nuts.

Grains are the equivalent of gasoline--fast burning, explosive energy (blood sugar spike) that leaves behind nasty residue in the environment (i.e. your body) in the form of Advanced Glycation End-products. AGEs can wreak havoc on your body via inflammation and oxidative stress which impair cognitive function, learning, and memory in conjunction with making you look older. Yuck!

Instead, my fuel source is primarily solar power (healthy fats) that provide my brain with steady, stable energy throughout the day. Our brains are composed of about 60% fatty acids and we only get fatty acids by eating HEALTHY FAT! In this meal I'm covering all the bases for brain health with mono/polyunsaturated fats in the form of organic eggs that are rich in omega 3's, avocado, extra virgin olive oil, and Medium Chain Triglyceride Oil with grass fed butter in my coffee.

Peanut butter chocolate flax meal chia seed bars! This is what happens when I get restless. I was going to make these super healthy and low carb then I was like nah...because peanut butter and chocolate IS life!
The original recipe called for quick oats which are high GI/carb but flax meal works just as well and gives the bars a more bitter flavor. I used maple syrup as my sweetener then added Ghirardelli dark chocolate chips mixed with peanut butter melted over the top.

My low carb remix would look like this:
3 cups flax meal
1/2 cup chia seeds
1/2 cup unsweetened shredded coconut
1/2 cup raw cacao powder
1/2 cup organic peanut butter
3/4 cup coconut oil
Stevia (to desired sweetness)

1. Mix dry ingredients together except stevia.
2. Melt peanut butter and coconut oil together by microwaving or by stove top. Add stevia. Whisk until combined.
3. Add wet mixture to dry and mix to combine.
4. Line a baking pan with wax or parchment paper, pour mixture into pan and level out by pressing firmly.
5. Cool in freezer for 30 minutes.
6. Cut bars into desired size.

Woks up guys? I promise this post will make up for that awful pun.

I love using my wok when I have a bunch of veggies and food that is starting to age. My plan is simple: chop, throw everything in the wok, drizzle with EVOO, and sauté. I never follow a recipe because when all of your ingredients are fresh and healthy you can't go wrong. Sautéing is THAT simple!

Last night I used some Chardonnay, turmeric (amazing for cooling inflammation), Slap Ya Mama Cajun seasoning, and Bragg's Organic Apple Cider Vinegar. I had carrots, green cabbage, red onion, and Aidell's chicken sausage leftover so that's what went in the wok. Cook on medium-high heat until the cabbage is soft and sausage browned. This only took 45 minutes to prepare and now I have food for at least 3 days.

My new favorite gluten free Italian-style dish: chicken sausage with shiritaki noodles, organic Bertolli sauce, sharp cheddar, and red onions. Going gluten free does not have to be painful!
You do NOT have to be a good chef to make this, just chop up some Aidell's chicken sausage and red onion, sauté in extra virgin olive oil to brown, then dump in tomato sauce, sharp cheddar cheese, and fettuccine Shiritaki noodles. I guarantee this will taste exactly like something you would order at an Italian restaurant.

Shiritaki noodles are an excellent low carb option in place of traditional pasta--without the massive blood sugar spike and inevitable carb crash! They're made with either white yams or tofu. Simply drain, rinse, and warm to prepare. Bon apetit!

A typical meal prep day for me: crustless quiche with chicken sausage, broccoli Rabe, sharp cheddar cheese, with the top sprinkled with Slap Ya Mama seasoning! I use 9 organic eggs and grass fed butter on the bottom to prevent them from sticking to the bottom while baking.

I also baked 2lbs of asparagus (on sale for $1.99/lb...chyeahhh!) coated in extra virgin olive oil, kosher salt, black pepper, and grated parmesan cheese. Total prep time for both: 1.5 hours!
Baking several things together at the same temperature (375) saves on electric and preheating time. I like to bake a protein-dense meal like quiche together with veggies like sweet potatoes, Brussels sprouts, or cauliflower.

Eating organic veggies and eggs regularly seems expensive at first but it should lower your grocery bill over time. I now spend far less money weekly eating gluten free/organic than when I bought and ate heavily processed food (i.e. everything that doesn't need to be refrigerated in the middle aisles!). My average weekly grocery bill is $60-$90, which covers 2-3 meals daily, snacks, and dessert. Cooking my own meals has saved me hundreds if not thousands over the last 2 years, I highly recommend getting into the habit of cooking your own food--it's very rewarding with practice and will save you TONS of money in the long run.

Roasted curried cauliflower with onions and whole garlic cloves! This is a simple, healthy side for any occasion and it always tastes delicious.

Recipe: Cut cauliflower heads into halves or quarters depending on size, slice onions, and peel garlic. Cover a baking pan with aluminum foil, spread out veggies then liberally drizzle all with extra virgin olive oil. Sprinkle with salt, black pepper, and yellow curry powder. Bake at 350 for 15-20 minutes then flip to brown both sides and cook again for 15-20 minutes (adding EVOO, salt, and curry powder to taste). Bake until the cauliflower is golden brown and the onions look crisp. The garlic turn sweet at this point.
This dish never lasts long with company, I recommend cooking two cauliflower heads if you want leftovers!

We had some friends over for dinner tonight who have a wild story! Awesome people use to live in our town, we are close family friends and the are fantastic! Tonight we had a lot of discussion about putting your trust in God and his plan for you. Basically their story is almost a year ago the felt prompted to move to the opposite side of the country. They felt the need to start a farmstead. So, the bought a bunch of acres of land and are currently living out of a trailer, in the middle of no where, building their house (and homestead)with their own hands! They LOVE it! Their story is crazy and for more info follow their Facebook page “The Firefly Homestead”. Oh man, what an INSPIRATION!! I just loved hearing this and the awesome attitude and excitement they have for life. The revolt around this idea of doing what you love to serve God. Wha AMAZING examples and inspirations the are!! Life CAN be joyful. Do wha you love to live a full life! .
