Out of the broiler and into my heart. This right here, is 24 hour sous vide carnitas nachos with black beans cooked with onions, sweet peppers, and spices, pepper jack cheese, and queso blanco. And that drizzle on top right there. That my friends, is a reduction of the marinating/cooking juices from the pork, which turns into what I would describe as, a velvety blanket of delicious, salty, collageny, concentrated porky carnitas goodness. Try and say that 5 times fast! Well you can’t! Because it’s so delicious you be tongue tied! The pork was flavored with spices including coriander, cinnamon, oranges, lime, onion, cloves, garlic, some soy sauce, and fresh bay leaves.
When I was about to drizzle the cheese on there, I tried to get Jacob to do it because, naturally, he was hovering over my right shoulder and seemed really concerned with everything that was happening, all wide eyed and starey. To which he respond creepily “no no, I’ll watch!” I’m like “Jesus, why do you have to be so creepy about it!” 😂. Anyway, we topped it with tomatoes, fresh cilantro, sweet bell pepper, chopped red onion, guacamole, and a roasted garlic, jalapeño, tomatillo, salsa I made recently. We also had this delicious mango chile beer with lime, with it, which complimented the nachos really well. Perfect thing to eat after waking up hours after you fell asleep sitting up in a chair after you got home from work.
