(Español al final) 🇬🇧Good morning healthy people! What for lunch or dinner today????
Make use of your food with this recipe. We had some vegetables in the fridge that need to go. This recipe
can contribute to reduce food losses and wastage. Sweet Potato in halfs, put into the oven, mid heat till cooked (optionals can be done with aubergines, pumpkins, etc.). Carving them and leave the mash apart.
🍚Cook some quinoa (or any other cereal like brown rice, millet, pasta, couscous...).
🍅Saute onions, leeks, courgette, leek and garlic till soft, add some chopped tomatoes and kale leaves (any other veggies you have at home is completely fine).
🍳Finally mix with the mash sweet potato and stir well, salt, pepper, cumin, paprika and turmeric. Add the cereal you chose (quinoa for us) and put into the carved halfs. So tasty! and look great isn't it? Add eggs or legumes to get a fully nutritional dish.

🇪🇸Hoy toca receta de aprovechamiento! Estas recetas nos ayudan a terminar con verduras que llevan en el frigo demasiado tiempo. Hemos usado un boniato pero se puede hacer también con berenjenas, calabaza, etc.
Corta el boniato a la mitad y al horno a temperatura media hasta que esté cocinado. Vacía un poco las mitades y reserva la carne que has sacado.
🍚Cocina quinoa , podéis usar arroz o pasta integral, couscous, mijo... el que tengáis a mano.
🍅Saltea una cebolla, puerro, calabacín y ajo hasta que estén pochados, añade las verduras que tengas en casa, nosotras usamos tomates en trozos y col rizada.
🍳Luego añadimos la carne de la calabaza y la quinoa y lo mezclamos todo durante un minuto. Retirar del fuego y repartir en las mitades del boniato que vaciamos al principio y voilà! Es un plato delicioso y rico que rescatará todas esas hortalizas que tenéis a punto de ponerse malas. Si le añadís un huevo o alguna legumbre, se convierte en un plato súper completo!

Misture:
•2 bananas
•2 ovos
•2 colheres de sopa de farinha de aveia (ou farinha de linhaça, de coco ou tapioca)
•1 colher de sopa de cacau
•Uma pitadinha de canela

When we were without chickens for the last six months, the thing I missed the most was diverting the compost! It’s crazy how much product scraps we go through in a day — this big bowl is just from supper last night. I know there are lots of ways to reuse it, into stock etc, or even put it to the county compost; but my chickens turned it into manure. Which then goes back into our gardens. Cycle complete. .

Everybody loves pasta! And I’m sure you have all heard that at some stage “white pasta is bad & whole wheat pasta is good” However, are they? To an extent yes however similar to any other foods their is no “bad” or “good” simply “superior” or “inferior” in terms of micronutrient composition. Let’s take a look 🧐🔽:

🔸REGULAR PASTA:

With the most in calories (357/100g), regular pasta is made from refined flour (wheat flour.) Taste wise, nothing beats a good ole classic spaghetti with meatballs. 🍝 the milling process involves stripping the grain of its bran & germ, which gives the flour a finer texture we love but lowers the nutritional content of the grain. Similar calories to the rest. .

🔸WHOLE WHEAT PASTA:
➖
Nutritionally, whole grain blends are better than regular pastas because it contains more dietary fiber, vitamin & minerals per serving comparing to white pasta. Because whole wheat has more indigestible fiber, it’s lower in calories. However both versions of pasta are prepared the same way.

As with anything, when comparing one food to another you need to consider them in the context of your diet as a WHOLE. If your diet consists of a lot of vegetables and fruits then considering going whole wheat is a better option for you due to having a high diet in fiber. Which adds bulk to your meal, helps keeps you satisfied after eating and helps regulate your digestive system. .

Moral of the story: Both are a great carb source and can be part of a healthy diet & though whole wheat pasta may have a slight edge nutritionally, this isn’t a “bad” thing. .

Vegan Coconut Tartlets
Crust
➡️½ cup almonds
➡️½ cup oats
➡️1 cup dates
➡️½ teaspoon cinnamon
Filling
➡️1 can coconut cream (or 2 cans coconut milk refrigerated overnight)
➡️2 tablespoons maple syrup
➡️blueberries or other fruit

DIRECTIONS: Blend the almonds, oats, and cinnamon in the Dash Blender until a course meal is achieved. Add the dates and blend into a dough. Press tablespoons of dough into a mini muffin tin lined with a strip of parchment to make removal easier. Bake at 350 degrees for 10 minutes. Allow to cool and pop out of muffin tin. Whip the can of coconut cream or the just solid coconut cream on the top of the 2 cans of cold coconut milk. Add the maple syrup and whip again. Fill the tartlets and top with fresh fruit. Serve immediately or store in the fridge.

Corteza
➡️½ taza almendras
➡️½ taza avena ➡️1 taza dátiles
➡️½ cucharaditas canela
Relleno
➡️1 taza crema de coco (o 2 latas de leche de coco metidas en el refrigerador una noche) ➡️2 cucharadas miel de maple
➡️moras azules o otra fruta ---------------------
DIRECCIONES: Licúe almendras, avena, y canela en la licuadora Dash hasta que se forme harina. Agregue dátiles y mezcle para que se haga una masa. Presione cucharadas de masa en molde de muffins minis cubiertos con papel en cerado para que sean fáciles de quitar. Hornee en 350 por 10 minutos. Deje enfriar y saque del molde. Bata lata de crema de coco o la parte solida encima de la lata de leche de coco fría. Agregue miel de maple y vuelva a batir. Rellene las tartitas y termine con fruta fresca. Sirva inmediatamente o meta al refrigerador.

Also. My husband and I watch Jeopardy every night. We record it and it’s the first thing we watch when the kids go to bed. We keep track of how many we get right in a little calendar planner. We’re not even that good. It’s just fun 😂

I used the Low Carb Donut recipe by @lowcarbjoy and just made my own adjustments based on the kinds I wanted. I didn’t have konjac flour so I didn’t use that. I did use 1/8tsp of xantham gum. I fried them in coconut oil after baking, as the recipe suggests. She nailed this recipe. These are the best donuts I’ve made
~Powdered Sugar (powdered erythritol)
~Cinnamon Sugar (cinnamon and erythritol)
~Glazed Chocolate (water and erythritol glaze)
