I am loving the new @ohsheglows cookbook. It makes me happy (especially in the winter) when I happen to have every ingredient in a recipe in my kitchen and I don’t have to leave the house to make it. This was the ‘comforting red lentil and chickpea curry’ and it was easy + quick. I made a pot of wild rice + now my lunches are prepped for a couple days ✅ yay! I’m not usually much of a ‘meal-prep’ girl but it does feel good to have something healthy + delicious already made and on hand so maybe I’ll make a thing of it 💁🏼‍♀️
It’s a new level of self-care rather than grabbing a couple of Lara bars and calling it lunch 🙈

Have you tried shishito peppers?!👅. It’s like playing roulette because 1 in every 10 are spicy 🥵😂. That aside they are super tasty and easy to make and you get your veggies in🙌🏼

#dEATS 1 bag shishito peppers, 1 tbsp @chosenfoods avocado oil, sprinkle sea salt. Roast for 5 minutes at 400F. You’ll hear some popping 😉.

Perdón por lo desaparecida pero he tenido mil cosas en la cabeza 🙆🏻‍♀️. Les traigo una receta fácil de pancakes que solo tiene 2 ingredientes. La ocupo cuando tengo ganas de comer algo salado 🥨 y algo dulce 🥞 en el desayuno. De esta manera quedo súper bien, sin esa pesadez por comer demasiado 🙅🏻‍♀️.

Pancakes rápidos 🥞.

•1 cucharada y 1/2 de harina a elección (harina de avena, harina integral, harina de almendras, etc).
•1 huevo.

Batir y dejar reposar por 2 minutos. Llevar la mitad de la mezcla al sartén, cocinar por ambos lados y repetir. Lo que pueden hacer es colocar la mitad de la mezcla, esperar que se cocine Y SIN GIRAR añadir un relleno, (a mi por ejemplo, me encantan con manjar sin azúcar) luego añaden la mitad de la mezcla que sobra y les queda un pancake gigante relleno 🤤.

Ideal para el desayuno, o para ese antojito que ataca en la noche. Hace poco probé un manjar @iansa_chile sin azúcar y la verdad, está aprobado, tiene textura y sabor a manjar. Se los recomiendo para que se den un gustito de vez en cuando 🥞.

Fab food optimising day....group day is usually easier for me as I can only eat what I bring 😊....dinner was a delicious turkey stir fry made my partner served on a bed of spinach, lunch in group was salmon salad berries, in 0% Greek yogurt. My snack before group was an amazing sausage & egg sambo using pan boxty, just 2.5 syns my only syns today

Quiet moment on a rainy day with some uplifting oils, tea and a good book.

I try to read something every day that will further my knowledge of health and nutrition. I first read Real Food by Nina Planck when I was in @nutritionschool and it was such a great perspective on food. One much needed in a society so focused on elimination and restricting. As a farmers market pioneer, she believes in simply eating real food, or what she calls “traditional” food, the way your great grandparents would have eaten it. I love that motherhood inspired her to write a similar book all about how to “eat for two” and how to feed baby.

Pictured are a few of my favorite things right now. This year I am really focusing on being a “taken care of” mom. Self care is huge for me these days, even if it just means taking a few minutes to breathe and relax with some @younglivingeo oils, drink some mama’s milk tea, and learn something new. GIVE ME ALL COLORS😍😍. Turkey “burger” salad for dinner tonight. I found organic ground turkey on sale for Wegmans for $1.50 which like.. is seriously amazing and also very questionable why it was so cheap?? .

So I grabbed a few (a lot) and now our freezer is stacked with frozen turkey hahah I had to make use of it somehow! Still this salad is FULL of nutrients - vitamin K, C, B, magnesium etc... also healthy fats from the guacamole and there are sunflower seeds hiding in there somewhere 🤦🏽‍♀️.

Last night I made the split pea bolognese (using lentils instead of split peas) from the @veggiesandchocolate cookbook 📗 and it rocked!! I’ve had so much meat the past few weeks that I’ve really just been craving meals that were little more plant-based so this plus chickpea pasta hit the spot 😋

💜A veces pensamos que comer saludable es algo muy complicado, caro y que debemos trabajar mucho para lograrlo. La realidad es que la mayoría de las veces podemos armar platos super simples y completos como este que armé. .
💜Y entonces donde está el secreto para poder llevar una alimentación saludable y no morir en el intento?? En la PLANIFICACIÓN y la ORGANIZACIÓN. Si primero no planificamos nuestro menú (Que puede ser semanal, quincenal o el período que quieras) y no organizamos las compras, la cocina, la heladera, freezer y alacena vamos por mal camino. .
💜Comenzar por planificar es un buen inicio.. Y luego ser CONSTANTES!!! Hacer las cosas bien una semana y luego todo mal no nos lleva a ninguna parte. .
💜Recién cuando logramos ser CONSTANTES durante un buen tiempo podemos pensar en que ya los hábitos fueron adquiridos 😀
