I just made dinner in 20 minutes! 💪🏼Thai Chicken Curry Soup in the INSTANT POT! It’s live in my Instagram stories for the next 24 hours! This is a @takeaimnutrition recipe from last fall we created together and styled at my home studio with @katyusha 🥘🌶🍵🥒🥕🍗
Thai Chicken Stew in the Instant Pot .
▶️Ingredients
1 -1.5 lbs cooked shredded chicken breast
1 onion
2 carrots
3-4 stalks of celery
Any other veggies to your liking
1 can lite coconut milk (or full fat if you prefer)
4-6 cups of chicken bone broth or stock
2 bell peppers
1 tsp ground ginger
1 tsp ground turmeric
1 tsp coriander
1 tsp salt
1 tsp avocado oil.

▶️GARNISHES
Ginger
Turmeric
Cilantro
Jalepeno
Lime
Cucumber
Red Onion
Green Onion.
.
▶️INSTRUCTIONS
1. Pre-cook the chicken in the oven or instant pot and shred. Set aside. (Or add raw chicken breast to instant pot in with all other ingredients)
2. Chop the onion, carrot, bell pepper, and celery in matchsticks or a small dice to your preference.
3. Use the "Saute" function on the intant pot to brown these veggies in the avocado oil until gently cooked and almost translucent.
4. Add chicken, stock, coconut milk, spices, and salt.
5. Cook on the "Soup" function for about 15-20 mins.
6. Release the pressure and enjoy or let it naturally release and rest in crock pot mode until you’re ready to eat.
7. Garnish with any of the above suggested toppings to brighten up the stew!

Ingredients:
3 Small beets, roasted and peeled
2 cans of chickpeas, cooked and drained
3 garlic cloves, minced
1 whole lemon, juiced
2 tbsp tahini sauce
2 tbsp olive oil
1 tbsp nutritional yeast
Pinch of salt
Pinch of pepper
Pinch of cayenne pepper .

Directions: •Preheat oven to 400F. Wrap each beet individually in foil, drizzled with a little olive oil. Cook for 50 minutes. •Once they pass the knife test, run under cold water and peel skin off. Chop and add to food processor with all other ingredients. Blend until smooth and top with micro greens and pine nuts! .

I’m pretty sure I made the best batch of greens this week🤗 There was a lot of conversation on Twitter last week (follow me on Twitter!) about putting hot sauce or sugar in greens. Now y’all know I’m all about the savoy foods, so the thought of sugar in my greens sounded 🤢. But I saw @thekitchenista mention she added a bit of maple syrup to her greens... I gave it a try and y’all.... I’m a believer. I used the same recipe found in my holiday guide and added 1 tbs of maple syrup, the bomb!! How do you eat your greens?

***EXOTIC RICE-CHICKEN DISH*** after a refreshing #workoutsession 😋💪 Last chance I could cook for myself this week as I'll be on holiday from tomorrow till Mondaaaaay😎 visiting my lovely family in #hungary and Saturday is a very special wedding day in our family. 💑 🍑 100g chicken breast 🍑 30g brown rice
🍑 30g courgette 🍑 2 apricots 🍑 1 tsp low sodium soya sauce
🍑 2 tsp unsweetened coconut flakes
🍑 2 asparagus 🍑 1 tsp coconut oil
🍑 1 tsp paprika powder
🍑 1 tsp ginger powder 🍑 pinch of salt

1. Pour the rice into a cooking pan and enough water to cover the rice.

2. Place it on the stove on low heat and cook it for 15mins with a lid on. Add a pinch of salt.
3. Heat up the coconut oil in a pan on medium heat and place the chopped chicken breast into it when the pan is hot enough. Pan-fry the chicken breast for 5 mins then add all chopped veggies and chopped apricots.
4. Add soya sauce, paprika powder and ginger powder. Stir-fry all ingredients for another 2 mins and remove the pan from the stove.

5. When the rice is ready combine the chicken-veg and apricot mixture with the rice in the cooking pan and plate it at the end.

6. Sprinkle the coconut flakes over the dish.

TBT throwin it wayyyyy back with this one to my childhood. My mother may she RIP always made me this simple but delicious salad. Soooo easy and to think this is the first time I ever made it !! Will be posting recipe for these delicious Filled Zucchine next Wednesday so be on the lookout for that😉
But you can get very creative with it. While the zucchini is raw cut out with the spoon the middle and then use any vegetables you like to mix on the pan and fill up the zucchine. You can then put them in the oven for extra 25-30 mins 😉
Zucchini is good for your digestion, lowers blood sugar levels, boosts energy, improves thyroid function and it is also a great antioxidant.

Recipe testing in progress! I'm really excited about this project cuz it will mean awesome, delicious, healthy, easy to store meals for you all!🌟 Maybe it sounds cool and fun to test out tons of recipes... Well, ok, it mostly is! 😁 But there is a side to it that you may not see... It means I eat a lot of food, I do mean alot of food, 🔋and sometimes it's food that doesn't agree with me 😒.
So what so we do when this happens!
I make sure I'm getting my meditation, water and work outs in first- these are the daily baselines that make a huge difference in how our bodies function. 📐
Then I up my intake of probiotics and fermented foods. Maybe take a little charcoal or clay to help carry things out.
And there is a good chance I'm also going to do some coffee... Up the backside...yup, an enema😲😲😲 Yup, I said it,. Yup I do them. And yup they are amazing and clearing and resetting. ☕
Of course, this all depends on what I ate and how 'intoletant' I am too it as well.
What do you do when you eat something that doesn't agree with you?

***SWEET POTATO - TURKEY SALAD*** another day, another recipe 🤗 can't believe the weather is soooo amazing, definitely in the mood for a salad 🌿 but first a few thoughts on why I have sweet potato on my shopping list quite regularly. 💪High amount of fiber supports your digestive system. 💪Due to the number of antioxidants that purple sweet potato contains, it is beneficial to your eye health. 💪Contains a variety of vitamins and nutrients such as calcium, selenium and iron. They are a great source of vitamin B and C too. 💪Another outstanding value of sweet potato is that beta-carotine transfers into Vitamin A once it's consumed. 💪In regards to cooking this #vitaminbomb there are pros and cons to it which the cooking process cause to the veg.
Cooking sweet potato reduces the amount of beta-carotine although increases the Vitamin C in it. 🙋Personal advice, make sure you never over-cook any vegetables as not just they won't taste the same but looses most of the vitamins. Keep them crunchy 🤗 🍠60g sweet potato
🍠 100g lean turkey breast
🍠 handful of fresh kale
🍠 lemon juice
🍠 pinch of salt
🍠 pinch of chili flake
🍠 1 tsp olive oil

1. Chop the sweet potato (thinly) and turkey breast into small cubes.

2. Heat up the olive oil in a pan on medium heat.

3. First, pan-fry the sweet potato cubes for about 5-8mins.
4. Put them on the side, in the same pan stir-fry the turkey breast pieces. Add lemon juice, salt and chili flake.

5. Place the kale, sweet potato and turkey on a plate.

***ALL YOU CAN EAT WHOLEGRAIN CREPE*** 🙋 anyone else is prepping for tomorrow?? Awesome #healthylunch idea from leftover ingredients. Huge amount of #goodfuel and #energy till your next meal💪 🌯 30g wholegrain flour
🌯 80ml unsweeened almond milk
🌯 2 eggs
🌯 30g butternut squash
🌯 20g turkey breast 🌯 2 asparagus 🌯 2 tbsp low fat cottage cheese 🌯1/2 tsp Dijon mustard
🌯 1 tsp honey
🌯 1 tsp coconut oil
🌯 3 sundry tomatoes
🌯 pinch of chili flake
🌯 pinch of salt
🌯 pinch of ginger

1. Dice all veggies into small cubes.

2. Combine flour, milk and 1 egg

3. Heat up the coconut milk in a pan on medium heat.
4. Pour the flour mixture into the hot pan and make sure you cook the crepe both sides.
5. Place the crepe on a plate when its ready. Combine cottage cheese, honey and mustard in a bowl. Spread over the crepe.

6. Pan-fry the veggies. Start with butternut squash as it needs more time than the others. After frying the butternut squash for 3-4 mins you can add the asparagus and 1 egg.

7. Lay the turkey breast slices on the crepe then add the veggies.
