Yesterday, I spent a lovely afternoon touring @grugerff , a local and family owned mushroom farm! I took home some freshly harvested #Lionsmane and #redoyster mushrooms and couldn't wait to start experimenting. Lions Mane hosts a powerhouse of nerve supporting nutrients and has quite a rich, meaty flavor while red oyster has a subtle smoky bacon-like flavor. I roasted those babies with some oak smoked sea salt and BAM- mushroom bacon.
I created a Lion’s Mane crab cake with lime/chipotle aioli, smoked red oyster bacon, cucumber spirals and fresh dill!
