#desayunosaludable con frutas diferentes. Generalmente no hay mucho tiempo en la mañana, ayuda tener las frutas picadas. Generally there is not much time in the morning, it helps to keep the fruits chopped in the fridge This is a smoothie of papaya, mango, sapote (very similar to mamey) and non dairy milk. 😍I love the color! On top you have granadilla, granola, chia seeds and grated coconut. Delicious, cute and healthy!

Breakfast: “hash” made with roasted sweet potato and @hilaryseatwell spicy vegan breakfast sausage
Snacks: plum, peach, carrots and organic hummus, 1/4 cup raw almonds, small “expired” banana and 2 cups of mixed fresh cut fruit.
Lunch: spinach, quinoa and roasted veggies.

Spanish Quinoa Stuffed Peppers!

The first time I started adding some plant based meals into my diet was down to the #meatfreemonday initiative which was launched by Paul, Mary and Stella McCartney in 2009. Meat Free Monday is a not-for-profit campaign which aims to raise awareness of the impact of the amount of meat we consume now in the modern world.

I was an avid meat eater, we are talking every single meal here, so it was a big change for me. But really it just comes down to changing a few habits, and once you get into the swing of making plant based meals it’s pretty easy to add a few in a each week. There are some really delicious recipes out there, it’s great for gut health which in turn is a game changer for health and performance.

This recipe from @minimalistbaker is really easy to make, tastes amazing, and has a nice kick to get rid of those Monday blues!

1/2 cup quinoa (thoroughly rinsed and drained)
1 cup vegetable stock (or water, but it will be less flavourful)
3 large red, yellow, or orange bell peppers (halved, seeds removed)
1/3 cup salsa (plus more for serving)
1 Tbsp nutritional yeast (optional)
1 tsp cumin powder
1 tsp chilli powder
1 tsp garlic powder
1 can black or black-eyed beans
1/2 cup corn, drained

Toppings (optional):
1/2 ripe avocado (sliced)
Fresh lime juice
Hot sauce
Coriander (chopped)
Diced red onion
Salsa

Add quinoa and vegetable stock to a saucepan and bring to a boil over high heat, then simmer until all liquid is absorbed and quinoa is fluffy.

Preheat oven to 190°C  and brush halved peppers with a high heat oil such as avocado oil or coconut oil.

Add cooked quinoa to a large mixing bowl and add remaining ingredients - salsa through corn. Mix to thoroughly combine then taste and adjust seasonings accordingly, adding salt, pepper, or more spices as desired.

Generously stuff halved peppers with quinoa mixture until all peppers are full, then cover the dish with foil.

Bake for 30 minutes covered. Then remove foil, increase heat to 200°C, and bake for another 15-20 minutes, or until peppers are soft and slightly golden brown.

Serve with desired toppings, or as is.

Crunchy Cajun Semolina Potatoes

Recipe:

Ingredients:

Potatoes: 800 gm cut in cubes
Cajun spice: 1-2 Tbsp or more depending on how hot you like your spuds
Semolina: 3 Tbsp
Good glug of olive oil
Salt to taste

Method:

1) Pre heat oven to 175 degrees
2) Bring a pot of water to boil and drop your potatoes in. Cook till they just begin to soften (about 7 minutes)
3) Drain you potatoes and pat them dry with a kitchen towel
4) Mix potatoes with the remaining ingredients
5) Roast for 25-30 minutes till golden brown

My meal today, my own quick and easy version of the Sindhi dish Sai Bhaji, with ingredients we had lying around in our refrigerator - leftover chickpeas, tomato and cilantro. Used frozen spinach from SM (so convenient and awesome - it's already chopped). Just put it together quickly, sauteing onion, garlic and tomato, adding the chickpeas, spinach, hot water, salt, cumin powder, coriander powder, turmeric and garam masala and bringing it to a simmer for around 10 minutes.. served with a side salad of tomato and cilantro and a little rice and I have a healthy, filling dinner :) #reducetarian #meatlessmeals #plantbased #vegetarian #sustainability #notofoodwaste #healthy #indianfood #philippines

Creamy Vegan Mushroom Pasta by @free_athlete 💛 Recipe:⠀
Ingredients:⠀
1 lb pasta of choice⠀
¼ cup olive oil or vegan butter⠀
4 cloves garlic, minced⠀
⅔ cup shallots, finely chopped⠀
8 cups mixed mushrooms, sliced⠀
3 tbsp unbleached all purpose flour⠀
3 cups unsweetened almond milk⠀
1 tbsp nutritional yeast, or ½ cup vegan parm, optional⠀
⅓ cup fresh parsley, chopped, plus extra for garnish⠀
2 cups frozen peas, thawed⠀
salt and pepper to taste⠀

Instructions⠀
In a large pot bring salted water to a boil. Cook pasta according to package directions and drain.⠀
While the pasta is cooking, prepare the sauce.⠀
Heat olive oil or butter in a large skillet oven over medium heat. Add garlic, shallots, mushrooms and ½ tsp salt and cook stirring occasionally, until mushrooms are browned and tender, about 10-15 mins.Turning down to medium low after 5 mins.⠀
Sprinkle flour over the mushrooms and stir to coat, allowing to cook for 30 sec-1 min. Bring heat back up to medium-high.⠀
Add 1 cup almond beverage, stirring constantly and it let simmer for 1 min. Make sure to break up any clumps.⠀
When completely smooth and thickened slightly, add remaining almond milk and pepper to taste, return to a simmer, stirring constantly.⠀
Cook until the sauce thickens slightly again, about 3 mins.⠀
Remove saucepan from heat and stir in nutritional yeast or vegan parm, if using until melted and or well incorporated. Add peas, and salt & pepper to taste and cook for 1 additional minute or until peas are heated through.⠀
Add the pasta to the mushroom sauce and toss to coat.⠀

Look away all Italian bean police for I have sinned; those amazing Sicilian heritage beans have ended up in a salad with ginger, coriander and lime. I shan’t apologise either because they taste amazing. There’s some fab’ Spanish extra virgin olive oil and English tomatoes thrown into the mix too, just to make matters worse. Luckily I have plenty of beans left for tonight’s pasta fagioli, and I really am quite happy to eat beans twice in one day.

“The sad reality is that most animals are not raised on small, local, let’s say more sustainable or more humane farms. They’re raised on factory farms. The average person simply can’t afford both the time and the resources to procure these better sources of animal products. I’m not worried about small farmers, I’m worried about factory farmers. I’m worried about the clearly most awful cases and situations. Once we start talking about humane meat and better meat we get our arms up and start arguing with each other. I really think that’s a mistake because of the mere fact that well over 95%, if not 99%, of meat comes from factory farms. So that’s why I’ve chosen to focus on the reduction message but I also wanted to share my thoughts on the kind of challenges and what I think is a distraction. I think vegans spend perhaps too much time worrying about these kind of small, local farmers. I think anything that’s not factory farming is something that either should be celebrated or left alone…

As my first meal I made salmon 🐟 from @trader joes, steamed some broccoli and cauliflower 🥦 🥦 , and toasted some whole grain fresh bread from @rouses 🥖 This was so easy to make, so delicious to eat, and healthy to the MAX. •
Post dinner got to have a great night with my friends and meet some new peeps! I love these good friendships and fun activities nights🌜🌛

@drenmi inspired me to make some energy balls for our long weekend diving trip. Ingredients: 1c rolled oats, 1/2c tahini, 1tbsp flax seed, 1 tbsp honey (use maple syrup to make it vegan), half a bar of chopped 85% dark chocolate and coconut flakes for coating. Bringing your own lunch to work doesn’t have to be hard- at the beginning of the week I boiled some quinoa, boiled some chickpeas then blended them with lemon juice, olive oil and garlic and grilled some chicken strips with pesto. I store the quinoa in a big box at work and froze the chicken in smaller portions to defrost for each day. Together with a handful of @riverford salad this is super easy to throw together in minutes at work! •


I know from friends that this can be hard i offices where there are no kitchens or communal seating areas. I wonder if this is a conversation more of us should be having with our employers? In Denmark most companies offer free lunch in a canteen to their employees!



A note on sustainability: for 4 lunches at work this week I used 250g of free range chicken from the butcher, which came to £2.84 and is about 50gm of meat a day. My body tells me i do need this animal source of protein but we try to eat all other meals vegetarian with protein coming from nuts, seeds, eggs, pulses and sheep/goat dairy. Perhaps we can’t all afford organic/free-range/local meat if we keep eating the quantities we are used to- but could one solution be to eat high quality meat but less of it?



Recent heat and the fact that earth overshoot day has now passed (we are using 1.7 x the resources the earth produces each year!) have really got me thinking about sustainability and the impact we have on the planet again! Perhaps we all feel like there is nothing we can do, but if a million of us do SOMETHING that definitely isn’t nothing!

While walking around the grocery store today, I realized the lack of amount of cooking 🥘 that I do. So now I’m holding myself to it to cook at least one meal a week (which will hopefully last me a few days). 💫

I ❤️❤️ cooking so this should be fun, and starting small is a good way to motivate myself with my goals. Eventually I’ll cook multiple meals a week!👩🏽🍳😋

Why aren’t farmed animals considered part of nature?

It’s a question that David Cassuto, an environmental law scholar, posed to me a while back — a philosophical question, but with practical implications, like his idea to have farm animal welfare considered under environmental impact laws. And it’s been on my mind lately following a recent visit to the Animals and Society Institute’s summer workshop.

The workshop featured a trip to Prairie Fruits Farm, home to the goats pictured above. We also met some other farmed animals in the area. It got me reflecting on how I write about wild animals and their minds and our ethical duties to them, and have reported on animals used in medical research — but about animals used for food and products I’ve hardly written at all.

There’s a few reasons. Wild animal issues receive comparatively less attention than domestic animals, so there’s a journalistic niche and a need there. I love writing about nature. And in some ways wild animals are easier — meaning more-academic, less-charged — to talk about critically. After all, they live outside; we can consider them at a certain remove. Farmed animals, though, are found in almost every meal we eat, adorning most peoples’ bodies every day.

Food and clothing are such personal things. Conversations can get uneasy fast. Instead I take the approach that thinking more attentively about wild animals eventually applies elsewhere.

But that feels like a bit of a cop-out: like I’m avoiding the discomfort of engaging with industrial animal use and with my own inconsistent habits. And, per Cassuto’s question, is there really a good reason to conceptually separate one set of animals so completely from another? Maybe writing about nature means considering farms too.

So I plan to write more about farmed animals in the future. And I did dip my toes with a recent blog post about the (very difficult to calculate) number of wild animals killed in field agriculture. Even in a plant-based dietary world, there’s still lots to think about.

My yummy vegetarian dinner today, black beans with some brown rice. I want to reduce my consumption of animal products.

It's so simple to cook! I soaked my beans overnight and then cooked them in the pressure cooker with some salt for about 15-20 minutes, drained it, then sauteed garlic and onion in olive oil, added the boiled beans, water, salt, black pepper, cumin powder, and cayenne pepper, and when it was nearly done, added the bell pepper.. that's it!

Lunch - which may look like a rather worthy Green Goddess, super- food delight( it certainly has all the credentials) but it’s exactly what I’m craving. I went to a fabulous bbq at the weekend - duck pastrami, perfect pork ribs, slow cooked beef ( plenty of cornbread, potato salad, slaw, iceberg and blue dressing, Waldorf salad etc too) - it was an absolute feast. I’ve not eaten meat since, I’ve not felt like it and increasingly I love to enjoy meat this way, as a treat, meanwhile I yearn for more and more veg’. It’s just habit and I think it’s one that hopefully more and more of us are forming. Global meat consumption has doubled in the last 50 years and is expected to keep on rising for the next 30, at huge cost to the planet. Changing the way we eat is vital and I’m really loving the journey. So here goes - sourdough toast with mashed avocado, pomegranate seeds, pumpkin seeds, sunflower seeds, Carmelina seeds, roasted almonds, spring onions, green chillis, pinch of dulse and extra virgin olive oil.

So here’s my story about listening to your body💅🏽💆🏽‍♀️ ft. Dinner
This morning I woke up, and I was so tired after a long weekend...AND I didn’t workout for 2 days. Naturally I wasn’t very happy about this and the stuff I ate/drank this weekend.

All day I tried to think myself into wanting to workout and it wasn’t happening, so I told myself, it’s okay to miss a day, it’s okay to eat a cookie. And i was content with this.🍩🍻

BUT THEN I got home and just not even thinking I put on my shoes and just ran, didn’t track it m, didn’t think about it. My body needed to let go of stress and the day, and this is what makes me happy.🌶️🌶️

It felt so good to not be forced or pushed to do the workout I didn’t want to do, and to be able to get outside and do what I love. A runners high kinda day 🙌🏽🙌🏽

Mashed potatoes with mushrooms by @elavegan 💛 Recipe:⠀
Ingredients
For the Mushroom Lentil stew:⠀
1 cup dry lentils, green or brown (190 g)⠀
1 large onion (chopped)⠀
2 cloves of garlic (minced)⠀
1 tbsp oil (for frying)⠀
3 tbsp white wine (40 ml) (optional)⠀
3 cups vegetable broth (720 ml)⠀
2 cups mushrooms sliced (135 g)⠀
2 tbsp soy sauce⠀
1 tbsp balsamic vinegar⠀
1-2 tsp each of dried parsley, thyme and oregano⠀
A splash of coconut milk canned⠀
1/2 tbsp cornstarch⠀
black pepper and chili flakes to taste⠀
Chopped pickles to taste (optional)⠀

Mashed potatoes⠀
4 medium-sized potatoes (600 g)⠀
1/4 cup coconut milk canned (60 ml)⠀
1/2 tsp nutmeg (or more/less to taste)⠀
black pepper, sea salt to taste⠀

Method⠀
Rinse lentils under running water. Meanwhile, chop your onion, garlic, mushrooms. Heat oil in a skillet/frying pan, stir in the diced onion, the minced garlic and fry for 3 minutes over medium heat.⠀
Add mushrooms, dried parsley, thyme, oregano, white wine (optional), balsamic vinegar, soy sauce (or tamari/coconut aminos to taste) and fry for a further 3-5 minutes.⠀
Now add the lentils and 3 cups of vegetable broth and cook on low-medium heat (add more broth if needed) until the lentils are tender (about 20 minutes).⠀
In the meantime, peel and chop potatoes, transfer them to a pot with salted water and bring to a boil. Cook on medium heat for about 15 minutes or until tender, drain. Transfer back to the pot, add coconut milk, nutmeg, black pepper and sea salt to taste and mash with a potato masher (don't use a food processor or blender).⠀
Once the lentils are tender, mix a generous splash of coconut milk and cornstarch in a small bowl and pour this mixture into the lentil stew. Cook for a further 1 minute or until the desired thickness is reached. Season again with soy sauce (if needed), black pepper, and chili flakes.⠀

Vamos a receita:
🌱2 xic.far.trigo integral
🌱2 xic.far.trigo branca
🌱1 xic.água morna
🌱3 col.sopa azeite
🌱1 col.sopa rasa açúcar demerara
🌱1 col.sopa rasa de sal integral
🌱1 envelope fermento seco p/ pão
Modo de preparo:
🌱Misture 1 xic. água morna com o açúcar e o fermento e reserve. Deixe por 15 minutinhos.
🌱Separadamente misture as farinhas de trigo o azeite e o sal e acrescente a mistura com fermento.
🌱Amasse e vá acrescentando mais água morna a massa de acordo com a necessidade, até desgrudar das mãos. Mas mantenha a massa úmida.
🌱Em uma bancada untada com azeite ( não coloque mais farinha na bancada ) sove a massa até ela ficar bem elástica e macia.
🌱Deixe descansar por 40 minutos bem abafado com panos de prato. A massa dobra de tamanho.
🌱Modele a massa ao seu gosto, ou na forma de pão de forma ou em bolinhas. Esse massa rendeu: 1 pão de forma médio e 6 bolinhas.
🌱Abafe novamente por 20 minutos e depois leve ao forno em temperatura de 180ºc até ficar com a casquinha crocante.
Ufa, cansa mais escrever a receita do que fazer o pão . 😂😜

Favorite Comfort Food | Some days you just need a favorite dish to love you up.
