It might look super simple...but, that’s because it is! Sometimes I really don’t have the energy for anything too complex, and I don’t want to spend hours in the kitchen (especially after work!) GF, DF, RSF, whole foods and no processing, as always!
You will need:
Bag of kale
Basil leaves (I have a plant at home as there’s always something basil is useful for!)
🌈 Heat the oven to 200°.
🌈 Place the basa fillets in tin foil with 3-4 basil leaves, drizzle of olive oil, basil, and a bit of black pepper. Seal up and place to one side. 🌈 Peel and chop your carrots and place in a pan with the mange tout, add kale to an oven tray with olive oil, and sprinkles of salt and black pepper.
🌈 Boil the kettle, and add water to the carrots simmering on a low heat at the same time place the basa fillets in the oven, and the Kale in the oven too, turn the Kale half way through the cooking time (after 5 mins).
🌈 After 10-12 mins, the fish should be done, the Kale should be crispy, and the carrots should be soft!
🌈 Drain the carrots, and serve up!
