The Mexican food in Colorado sucks. There, I said it and am #sorrynotsorry. Growing up in California and trying Mexican food across the states, California hands down, wins unequivocally. We’ve pretty much given up on eating Mexican food here in Colorado at restaurants because it’s like eating Oatmeal Raisin cookies, hoping they’d be as delicious as Chocolate Chip Cookies, only to be sadly disappointed. However, today we found a glimmer of hope...aka the Roach Coach. If y’all haven’t tried Mexican food from a taco truck, y’all haven’t lived. After months of driving past a taco truck that parks off the side of the highway on a dirt road that leads to a cemetery, we finally stopped to give it a try. I mean, it’s next to a cemetery, so on a scale of 1-10 for sketchy, it’s a legit 10. The verdict: foodgasm. It was literally like tasting the tacos from home, spicy as hell, flavorful and breath that will smell for days like onions and cilantro. Friends, this is your daily reminder that dreams do come true. 😂 .
So, we all know where we’ve enjoyed amazing Mexican food but I want to hear about your worst Mexican food experiences. If you live in Colorado, I have two words: Casa Bonita. I mean, anyplace that uses nacho cheese on enchiladas clearly shouldn’t be allowed to call themselves Mexican food. And never trust people you just met for food referrals. 🤢🤮 .
