Highlight of the day included going to Sakai City to watch a professional Japanese knife and katana craftsman. His workshop has all handmade tools and he even makes his own charcoal too! This was the basic process of forging the steel and iron knife. He took about 25-30 min to complete the process while explaining himself. Then there's 30+ more steps to grind and finish the knife to its final state where it's ready to sell.
Many professional chefs in Japan use knives from Sakai City and even foreign chefs have discovered the high quality products too!
