It's no secret that I love salads and promote the habit of one salad a day, but what you might not know is that I have an easy template for building meal sized salads. 🥗 This approach makes for salads that are satisfying and filling... because we've all eaten a salad for lunch only to be ravenous 20 minutes later. 😩 So let's break down what a meal sized salad should look like.

1. Smart Carbs -- I know #lowcarb diets are trending and I'm all for limiting processed carbs, but smart carbs (starchy veg, whole grains, etc) are fuel for our bodies and are especially important if you workout. 💪🏼Roasted sweet potatoes are my favorite carb to add to salads but you can do fruit, grains, beans, etc. 🍠
.
2. Healthy Fats -- fat is the key to making salads satisfying and it helps your body absorb all the fat-soluble vitamins in the salad! I love adding a 1/4-1/2 an avo to my salads, but there are so many healthy fats you can add -- nuts, cheese, hummus and dressings! 🥑
.
3. Protein -- Pick your favorite healthy protein option and load up. The serving should be about the size of your palm. My go-tos: hard boiled eggs, grilled chicken or shrimp, tempeh and edamame. 🥚🍤🍗
.
4. Veggies -- This is where you can have fun adding different colors/flavors to your salad. Have a goal to add at least 2-3 different veggies -- preferably ones that are low-cal, high-fiber + high-water. Cucumbers, zucchini, jicama, tomatoes, onions, etc). The more colorful, the more nutrients. 🥒🌶️🍅🥦

5. Greens -- Salads are a volume eater's BFF because you're going to load your salad bowl with loads of low-cal, nutrient dense greens. The darker the greens, the better and remember to switch up your greens from time to time so you're getting a variety of nutrients. 🍃

Big salad for lunch! Doing some cleaning today. Then I’m going to get us ready and head out to my moms. I have always been a fan of ranch dressing. But lately I’ve just been using oil, lemon, and pepper. I haven’t been able to find a ranch with clean ingredients and the one I did find I didn’t care for. So I need a good homemade one! If you have any recipes or know of a good one I can try let me know!! 🤗
Salad details: salad mix, hard boiled eggs, beets, avocado 🥑, onion, and @go_raw sprouted sunflower seeds. With a side of watermelon kombucha!

Linsensalat
Der hat sogar meinen Papa überzeugt, obwohl er sich seit irgendwie 10 Jahren einredet keine Linsen zu vertragen (und oh Wunder, er tut es doch). Aber die Kombi mit den gedünsteten Zucchini und den getrockneten Tomaten ist echt geil 😍🙈 Schon wieder so viel Eigenlob hier, aber es ist einfach lecker...
Zutaten:
⚫️1 kleine Dose Linsen (ca. 260g)
⚫️150g Zucchini
⚫️50g Zwiebel ⚫️30g getrocknete Tomaten
⚫️1 Zehe/1 TL Knoblauch
⚫️1 EL Salz
⚫️1 TL Kreuzkümmel
1. Zwiebel schälen und hacken.
2. Zwiebel anbraten und in eine Schüssel geben.
3. Zucchini waschen und würfeln.
4. Zucchini andünsten und zu den Zwiebeln geben.
5. Tomaten kleinschneiden und ebenfalls in die Schüssel geben.
6. Linsen abgießen, dazugeben und alles würzen. Abkühlen und durchziehen lassen.
Makros: 305 kcal, 47g KH, 2g F, 21g P

DINNER 🥘. What’s better than having a healthy food which is yummy 🤤
I was so lazy today didn’t make anything for myself in lunch so decided to treat myself with a good salad 🥗 in dinner.
Added cucumber, apple, almonds, walnut, whole wheat pasta, shredded chicken and mixed it up. Seasoned with olive oil and lemon. Sprinkled some salt and black pepper.
Made kebab in 1tsp oil. Dinner is ready! .

Just got a delivery with loads of fresh organic parsley 🌿 (thank you @calorganicfarms) and now all I can think about is making tabbouleh. 💁🏻‍♀️

I have 3 tabbouleh recipes on EBF, none of which are your standard tabbouleh with bulgur wheat. I've got this #glutenfree quinoa version, and two #grainfree options -- one with hemp seeds and one with cauliflower. They're all delicious especially when paired with heaps of hummus and pita bread. ☺️

Reissalat
Heute mal ein Rezept was ich aus dem Urlaub "importiert" habe (der wohlgemerkt in Skandinavien war 😂) Dort im Supermarkt gab es einen fertigen Thaisalat und der war so lecker, dass ich mir die Zutatenliste abfotografiert und mithilfe von Google Übersetzer entschlüsselt habe um ihn nachzumachen. Das habe ich dann auch (natürlich ein bisschen makrofreundlicher) gemacht und er ist auf Anhieb soo gut geworden, ich war selbst überrascht. Selbst meine Familie war begeistert und das hat was zu heißen...
Zutaten:
⚫️75g Basmatireis o.ä.
⚫️140g Edamamebohnen
⚫️150g Paprika
⚫️50g Zwiebel
⚫️75g Mango
⚫️20ml Zitronensaft
⚫️Ingwer
⚫️Salz
⚫️Chilli
1. Reis nach Packungsangaben kochen und abgießen.
2. Mango, Zitronensaft, Ingwer, Chilli und Salz zusammen pürieren.
3. Paprika waschen, entkernen und kleinschneiden.
4. Zwiebel schälen und kleinschneiden oder hacken.
5. Edamamebohnen abspülen.
6. Alles zusammen in einer Schüssel vermischen.
Makros: 498kcal, 78g KH, 9g F, 21g P

Soooo this post-partum Mama is about to make a comeback with her nutrition! During my pregnancy I actually couldn’t eat much and had no cravings. I only gained 12 lbs and Nia weighed 7lbs 6oz. So after she was born my appetite returned with a vengeance! I’m not going to lie I’ve been indulging too b/c I missed eating! But now I’m reeling it in! Starting slowly with at least 1 salad a day! The 1 modification I’d make to the taco salad is NO French dressing! (I know better but was feeling like indulging. I most def used 1 tablespoon or less but it’s full of calories so I’ll pass next time.) Also I used nitrate free lunch meat on 1 of the salads. If you do have to use lunchmeat then nitrate free is a healthier option.
