[ Lazhu 辣竹 ] Quite impressed with the Jiangxi restaurant at Amanyangyun resort. Lazhu draws on the talents of six native chefs from Fuzhou City, presenting a classic iteration of #Jiangxi cuisine. Jiangxi cuisine is distinguished by its fragrant and spicy flavors, and is known for its fish courses.
This crispy yellow croaker is a Jiang Nan specialty; some would also say a Jiang Zhe dish as well. Thick fillets of deboned yellow croaker is seasoned with sugar, soy, ginger, and pepper, fried until crispy. Honey-sweet on first bite, then savory and juicy levels of flaky fish. •
Shredded jellyfish with onion oil - crunchy, served cold, addictive. It’s like cartilage, providing a satisfying mouthfeel with fragrant onion oil and a splash of vinegar to lubricate it all. •
Pig ears with caraway salad; seasoned with aniseed, coriander, splash of wine, chill dressing. As addictive as the jellyfish. •
Others: Fresh yam with mint and orange dressing and aged rice wine marinated chicken. Fish maw soup with bamboo pith. •
