I made my first ever curry!! Or I guess technically my crock pot did 😉 Put this over some basmati rice and cauliflower and voila, perfect dinner for a chilly fall night ❤
Now I dont have exact measurements of things because if I havent mentioned previous, I kind of throw everything together until it smells good.
Sautee one yellow onion, 4 garlic cloves in some olive oil, add in sweet potato chunks and 1 can of chickpeas, curry powder, fresh ginger, pepper and cayenne pepper.
Add it all to the crockpot with bell peppers, 1 can of diced tomatoes ( drained) about 2 cups of vegetable stock, 1 tbsp of almond butter and let it cook on low. I left mine for about 4 hours.
Throw in some kale and a can of coconut milk about 10 mins before eating 😘
