When I was living in New Orleans, many would assume that I know how to make shrimp fried rice. I remember walking by the river on one Sunday, a guy yelled across from the street, “Hey, baby you make me wanna eat shrimp fried rice.” I wasn’t mad or didn’t even think it was a racist comment. I took it as a joke.
The fact is I do make good shrimp fried rice just not the oily type they serve in Chinese-American restaurant in the States.
Shrimp fried rice is a quick dish we order a lot (especially in the south of Thailand where you get good quality shrimps). The difference is that we spice it up with fish sauce full of chillis/garlic and sometimes slices of ginger along with a wedge of lime and some scallions.
Actually to Thai people, this is more classic than PadThai.
