Spirit of the Week: @TequilaOchoUSA Reposado El Refugio. Made by the #Camarena Family and in collaboration with Tomas Estes, #TequilaOcho is known for taking the concept of "terroir" and implementing it into their production of tequila. Each of their tequilas is produced from single estates across the region of Arandas, Jalisco. Every bottle is designated with both the year it was produced and the field it was harvested from, making each vintage both rare and a collectable. Rancho El Refugio sits at 2,055m above sea level near the distillery where Ocho is made. The high elevation, rich red oxide soil, and local climate makes for agaves with very high sugar content. This particular bottle of Refugio, which is rested for 8 weeks and 8 days (one of the reasons why it's called Ocho), has a beautiful evergreen mint aroma, with pine and cooked yams. When tasting, you'll notice hints of oak, brown sugar, spice, and pepper. ¡Salud!
