___I love this dish a whole enchiLOTa. All puns aside, I love making my own Mexican recipes so I can control the ingredients and spices. Anytime I get these types of meals at restaurants my stomach blows up and I’m bloated for days. This enchilada skillet is light and full of veggies. I added in some mashed avocado on top and a dash of cheese. ⬇️ What is your favorite Mexican dish⁉️
1/2 onion chopped, 1 C tomatoes chopped or 1 large tomato, 1 sweet bell pepper chopped, 1lb ground beef, 2 tbsp broth (any choice), 1 tbsp fresh minced garlic, 1/4 C liquid aminos, 2 tbsp tomato paste, 1 can black beans about 8-10oz. Optional: scallions, avocado and cheese for toppings
1️⃣Grab a skillet and set to medium heat. Add in your garlic and onions, simmer for a couple minutes
2️⃣Add in your peppers, tomatoes and broth. Simmer for about 3 minutes
3️⃣Add in your beef and liquid aminos, cook thoroughly. About 5 minutes
4️⃣Stir in your tomato paste, and simmer for another 3 minutes until most of the remaining liquid is gone.
5️⃣Stir in your black beans and add any additional toppings and enjoy
