Made a late night batch of pecan bars as a belated birthday present for mom. The filling was made with brown sugar, brown butter and a splash of rum, sandwiched between a crust made of shortbread infused with roasted and pulverized pecans, and topped with coarsely chopped pecans and coarse sea salt. We couldn't eat them straight out of the oven, as the filling had to set. But they were warm and fragrant when they were ready to cut! The rum balanced the sweetness of the sugar in the bars, and the salt was a great contrast
You can oven roast the pecans, or other nuts when making recipes, but I prefer to watch 'em on the stove over medium heat, to reduce potential burning. When they get fragrant, I toss them in the pan, and remove them from the heat when they start to turn color.
