Spaghetti Squash Chow Mein 😩🤤
This was simple, delicious, cheap, & filling. .
-1/3 bag frozen peas & carrots
-1 onion, chopped
-2 cloves of garlic, minced
-1 spaghetti squash, roasted
-1 cup soy sauce -1/3 cup honey
-3 tbsp brown sugar -2 tbsp vinegar (I used white balsamic & DAYUM)
-pepper, cayenne pepper, red pepper flakes,
-dash of sweet chili sauce
-cut spaghetti squash in half & rub spices on it with a little bit of olive oil. Place in oven for 40 minutes at 425. -chop onion, mince garlic and simmer with some butter on low-med heat. Once fragrant, add frozen peas & carrots. -combine the sauce mixture to the vegetables. Keep at simmer so it gets thick. -you can tell the squash is ready when it’s easily shreddable. Everyone likes a different consistency to their noodles, so taste test as you go! 40 minutes will make them soft. Shred & add to your sautéed veggies. Add more sauce ingredients as necessary; the measurements above are a rough estimate.
This was one of my favorite meals I’ve made in a while, it was healthy (besides the sodium) and filled my craving of Chinese food. —————————————————————————
