It’s that time of the year when we remember what we’re grateful for and I am beyond thankful for the memories, good and bad moments, for the smiles, for the opportunities and for the new people in my life.
Needless to say, and i am also grateful for Matcha . I’ve created tons of recipes with it but this is by far my favorite one, since it’s vegan, low-cal, gluten, dairy, sugar free and full of antioxidants plus super easy to prepare.

1 cup @elmhurst1925 Milked cashew
4 tsp. Matcha green tea powder @matchaeologist
2 cups almond flour @nutsdotcom
1/2 cup extra virgin coconut oil @jarrowformulas
1 1/2 coconut sugar
2 mashed ripe bananas
2 tsp. baking powder
2 tsp. Organic vanilla extract
Preheat oven to 325F degrees; spray a loaf pan with coconut oil and reserve.
Beat bananas, vanilla extract and milk together. Once well mixed, add the rest of the ingredients.
Pour batter into pan and bake for 45-50 min or until golden brown on the outside and a toothpick comes out clean.
Cool at the countertop for at least 1 hour before serving.
Enjoy with berries and tea on the side.
