Soooo...I had a bunch of random ingredients in the fridge. This came out WAAAAY better than expected! Sautéed cauliflower 'rice', Mexican Fiesta-seasoned Grilled Chicken and I wilted some Super Fresh Arugula. Topped it all off with Avocado and used a little TJ's Organic Tomatillo Roasted Yellow Chili Salsa as a garnish! BAMMM!
