Nothing like a big ol’ stir-fry when you’re up to your ears in CSA share veggies. I toss mine with dry-fried tofu and make the sauce from sautéed ginger, garlic, hot pepper flakes, soy sauce, cornstarch (to thicken), water (to thin 🤣) and sometimes some maple syrup to balance out the salty & sweet. Following Dr. Greger’s suggestion, I chop up the broccoli first & let it sit for 40 minutes to release all that health-promoting sulphoraphane (a phytonutrient in many crucifeous veggies). 🥦Brokkolisalat:
🔹1 brokkoli
🔹1 liten rødløk
🔹2 dl kesam/rømme, evt plantebasert
🔹2 ss eplecider eddik
🔹Syltet eller fermentert rødbete
🔹Fetaost i olje (kan sløyfes)
🔹Litt valgfri søtning for å balansere smakene
🔹Litt karri, salt og pepper

Bland kesam, eddik, søtning og krydder i en salatbolle.

Kutt brokkoli og rødbete i mindre biter. Stammen kan du ta ytterste laget av og skjære i skiver. Hakk rødløk fint. Bland alt sammen og smak til.

Tilsett fetaost i terninger. Du kan alternativt bruke cottage cheese eller Plante basert ost i blokk skjært i terninger.

La stå tildekket i kjøleskap i minst en dag. Jeg tror faktisk den er aller best etter fire😊

Sauce for broccoli:
2 tbsp soy sauce
1 tbsp rice vinegar
1/2 tsp chili paste
1/2 tsp grated ginger
2 cloves garlic, minced
1 tbsp oil (I used algae oil)

Long health post! I have always been interested in how food affects every aspect of our lives, more importantly, how it affects our body. I recently came across Dr. Rhonda Patrick of @foundmyfitness while listening to @joerogan. Dr. Rhonda Patrick has a PhD in biomedical science and has done and reviewed numerous studies on certain foods and their affect on our bodies.
Nutrition is extremely complicated and I hate how western medicine barely scrapes the surface to guide health care. One recent podcast I listened to talks about a potent substance called sulforaphane.
Sulforaphane is found in cruciferous vegetables and especially in broccoli sprouts. It is well studied to be anticancer, antimicrobial, anti-inflammatory, neuroprotective, and may even protect against aging and diabetes. Brocolli sprouts have 10-100 times as much sulforaphane as raw broccolli. Instead of buying a tiny little bit of them that are days old and expensive, I've taken to growing them myself. I blend them with blueberries, banana, a leafy green blend, yogurt, peanut butter, and chia/flax seeds for a delicious healthy meal.

My meals always look like a hot mess but they’re sooo good and packed with tons of nutrients & healthy fats. ⁣

This meal is: grass-finished beef, 🥑, roasted cauliflower, roasted Brussels, organic cherry tomatoes, @hamama_greens sprouts, gomasio (sesame seeds + kelp #iodine), sprouted sunflower seeds, & avocado oil mayo. ⁣

When building a meal, I always start with a high-quality protein. Next I add veggies (ideally some cooked and some raw), add lots of fats & toppings. ⁣

Some things I like to keep in my pantry to add to meals for extra fats, flavors, and/or nutrients:⁣

•Sprouted seeds (easier to digest + fewer anti nutrients)⁣
•Non-fortified nutritional yeast (B-Vitamins)⁣
•Hemp hearts (healthy fats)⁣
•Nuts (ideally soak overnight & rinse)⁣
•Gomasio (sesame seeds + sea veggies)⁣
•Sprouts (soo nutrient dense #sulphoraphane)⁣
•Fresh herbs ⁣
•Homemade dressings with EVOO or avocado oil⁣

High in heart-healthy monounsaturated fat (70 per cent). Almond oil: Smoke point: 430 degrees F. Use for frying, grilling, roasting, baking and salad dressings. High in monounsaturated fat (70 per cent) and an excellent source of vitamin E (1 tablespoon provides 5.3 mg, one-third of a day’s worth), a potent antioxidant.

Butter: Smoke point: 350 degrees F. Use for sautéeing and baking.

Canola oil: Smoke point: 400 degrees F (refined). Use for sautéeing, pan-frying and baking. A good source of monounsaturated fat (61 per cent) and high in alpha-linolenic acid (ALA), an anti-inflammatory omega-3 fatty acid. One tablespoon delivers 1.3 g; women require 1.1 g ALA per day; men need 1.6 g.

Coconut oil: Smoke point: 350 degrees F. Use for sautéeing and baking. It’s high in saturated fat (86 per cent). The saturated fat in coconut oil raises LDL (bad) blood cholesterol, but not nearly to the same extent as butter. Coconut oil also seems to raise HDL (good) cholesterol.

My breakfast 😋 It’s great to start the day with nutrient dense, anti-inflammatory foods. This morning, I steamed kale and broccoli rabe in the Instant Pot for 2 minutes, then did a quick release. The fresh greens 🌱 are so sweet and tasty that there is no need for any seasoning at all. The citrus 🍊 is an excellent source of vitamin c, fiber and much more and it helps with iron absorption. Ah the Savoy Cabbage 🥬 humble, inexpensive and has a whole host of health benefits.
It's versatile too, have it steamed with a drizzle of olive oil, salt and pepper or chopped into a stir fry, shredded into a slaw and braised with a roast dinner.

Brassicas!! The hardy plants of the cruciferous family.

What’s not to love? 💕 🥦
They are beautiful, vibrant in colour and nutrient dense....ahh but some find the taste to bitter. Did you know that could be down you your genetics!
In the second photo the Kale on the left is a sweeter less fibrous version.
So why do we need to eat them? Other than great levels of folate (B9) needed for energy metabolism, DNA synthesis and repair they contain something called sulforaphane.
So how do we cook them?👩‍🍳 Well sulforaphane is very heat sensitive so your probably best eating some cruciferous raw ➡️ rocket, watercress, radishes are all easy to get in raw every day. Folate is water soluble so the best way to preserve that is to eat those brassicas raw ➡️ think cauliflower rice, shaved vegetables or wizzed into a pesto otherwise stir frying quickly.
How can we make them yummy for everyone? Even those with a genetic SNP? ➡️ try steaming then covering in a soy dressing 🥦 ➡️ try steaming the rolling in a home made tomato sauce 🍅 ➡️ try stir frying with some shallots and garlic and a pinch of salt

Starting of with small amounts we can train the taste buds to like things. These little guys might just be one of the world’s healthiest foods….They contain a lot of SULPHORAPHANE (mature brocoli does too, as do other cruciferous vegetables, but sprouts contain THE MOST by far). ⁣

What’s so great about Sulphoraphane?? ⁣
#Sulphoraphane has been shown to have very potent cancer preventative effects. ⁣

It’s also a powerful activator of the very important NRF2 pathway in our bodies. ⁣

The NRf2 pathway affects the expression of over 200 genes including antioxidant and anti-inflammatory genes and genes that inactivate harmful compounds. ⁣
