Seared/Baked Ribeye Steak with Cauliflower Gratin
Season the Ribeye with salt, pepper, onion powder and garlic powder. Sprinkle a bit of cayenne powder and chili powder on the steak. Rub it all it all over Steak. Sear in olive oil in a cast iron skillet or large pan for one minute on each side. Put into a baking pan or cast iron skillet and bake in the oven on 350 for 25 minutes.
While that’s happening, core a cauliflower and place it in boiling water for 15 to 20 minutes. After, make a rue with 1/4 cup of flour, one cup whole milk, generous salt and lots of pepper. Stir vigorously with a wooden spoon until thickened. Add half to one cup of Monterey cheese. Put the cauliflower into a baking dish with the Rue. Cover with foil and bake on 350 for 30 minutes. $10.00 and feeds three people. You can add another Ribeye for another $8 which will feed four. I make a simple salad of cabbage and baby romaine with it. A little olive oil and rice wine vinegar, salt and pepper! Raw cabbage is great tasting and healthy and can help knock out a cold.
