My family wanted tacos for dinner, I wanted sweet potatoes. So, I made this sweet potato refried black beans taco toast......or whatever. Here’s how I made it:
•Preheat oven to 400 F
~ Sweet Potato - cut lengthwise (I cut mine pretty thick) drizzle olive oil, pink salt and pepper on both sides. Bake for about 25 min, flip halfway. .
~ tacos: chopped 1/2 onion, 3 cloves of garlic. In a hot skillet, add 1 lb of ground meat (I used ground turkey) and brown for about 5 minutes, breaking it up as you go. Add the onion and garlic, cook for about 3 minutes. Add 1 taco seasoning packet, I used Simply Organic Southwest Taco mix making sure to coat the meat mixture, add about 2/3 cup of water and cook until most of the water is absorbed.
~refried black beans: finely chop 1/2 onion and 2 cloves of garlic. In a hot skillet add olive oil and add the onion cook for 3 minutes then add the garlic, cook for another minute. Add 1 can of black beans (rinsed) to the skillet, lower the heat to the lowest setting and mash away. I used a potato masher, but you can use a fork. Mash until smooth, season with 1/2 teaspoon salt, 1/4 teaspoons each garlic powder, onion powder, cumin, paprika and chili powder. Add about 1/3 cup of water, stir and remove from heat. If it seems to dry, add more water.
~assemble: put a sweet potato slice to a plate, add refried beans, taco meat and I topped mine with chopped bell pepper, jalapeños, cilantro, sour cream, guac and fresco. .
