Today I was feeling inspired so I made something I have never made before. Inspired very very loosely by congee, which is a Chinese rice porridge (containing chicken and 0 lentils) I've seen only in photos and never tasted.
I really need to start cooking lentils without making them into a curry so this is one dish.
It is basmati rice and urid dal in equal parts boiled and simmered with Bouillon (veg stock).
Separately I stir fried onions, samphire, ginger, garlic an soy sauce.
Combined the two and finished it off with fresh spring onions and a squeeze of lime
