Dessert, anyone? Celebrated my mama’s birthday with my favorite go-to vegan chocolate cake recipe inspired by @veganricha . Strawberry preserves between two layers of moist (cringe) chocolate cake, topped with a dark chocolate almond ganache. It sliced up nicely but I may or may not have just gone straight at the cake with a fork (it has whole wheat flour, apple cider vinegar, almonds, and dark chocolate, so it’s basically a health food, right? 🤷‍♀️)!

One of my biggest challenges with cooking over the years has been ignoring my //slightly// Type A tendency to follow recipes exactly as they’re written. But tweaking recipes or (gasp!) working without them allows for more seasonal and also economic cooking because you’re using what’s available and what you’ve already got on hand. I’ve been wanting to try @food52 ‘s recipe for whole roasted cauliflower with turmeric-tahini sauce and pistachios, but romanesco is what I found at the farmers market. I subbed in capers for the olives, quick-pickled radishes for the pickled onions, and fresh cherries for the pomegranate seeds. I paired it with lemon-tahini-mint-crusted tofu steaks (and in my imagination, a nice glass of wine ;). •

Because sometimes I get bored with overnight oats 🤷🏼‍♀️ Sweet potato breakfast bowl inspired by @frommybowl . I just mashed roasted sweet potato with vanilla, cinnamon, flax, non-dairy milk, a little almond butter, and salt. Then I added lightly sweetened sprouted granola from @larkellenfarm , a little tangy unsweetened @kitehillfoods Greek-style yogurt, berries, and raw cacao nibs. It’s easy to bulk prep ahead of time and is super filling!

Aiming to become closer to #zerowaste with each grocery haul. Any bags/containers have been reused. Next goal is to make my own broth and yogurt. Anyone have lower waste options for tempeh/tofu? They’re notorious for wasteful packaging.

#TBT to when @veganstreetfair herself asked me to meal prep for her and her hubby. I had a blast making a mostly organic, local, low-oil and low-sugar, fully plant-based menu. Made with lots of ❤️


1. Lentil, spinach, roasted cauliflower, date salad with lemon tahini dressing (inspired by @luisegreenkitchenstories ) and locally made whole wheat flatbread.
2. Garlicky tomato penne pasta (inspired by @minimalistbaker ) and roasted broccoli.
3. No-tuna chickpea salad with fresh vegetables and @traderjoes ‘ beet crackers.
4. Smashed roasted sweet potatoes with smoky beans, @bubbiespickles sauerkraut, homemade hummus (with @soomfoods tahini), lemon, upland cress, and avocado.
5. Pistachio- and tahini-crusted tofu with Mediterranean salad and turmeric sprouted brown rice.
6. Balsamic lentil and potato stew (inspired by @thefirstmess ) and roasted Brussels sprouts.

Almost two years ago, I made the transition from a vegetarian diet to a plant-based lifestyle, with much trepidation. It is by far one of the best decisions I’ve made, and has helped me come into myself and given me more perspective than any college, travel, or other experience deemed “life changing.” It was so inspiring to be at @veganstreetfair yesterday in the beautiful weather amongst such a diverse crowd (and I do mean CROWD), filled with people of all ages, from all walks of life, both vegans and non-vegans. Definitely bringing my own utensils and containers again next year!

Hoje, inspirada pela Mónica (@moniq_sweetreats) e para variar, papas de arroz integral. Ficaram deliciosas 😋
Na nossa alimentação diária devemos dar preferência aos cereais integrais, muito mais ricos em nutrientes que os cereais processados. O arroz integral é muito rico em vitaminas do grupo B e proteína e é excelente para o desenvolvimento intelectual, sendo particularmente benéfico para o intestino grosso. É excelente para tratar problemas intestinais. Comer de forma saudável é também escolher os alimentos mais amigos dos nossos órgãos.
Para fazer as papas é só demolhar o arroz durante 6/8 horas (eu deixei mais, durante o dia de ontem) e depois cozer com alga kombu, cheia de minerais e que torna o arroz mais digerível. 1 chav. arroz para 6/7 chav. água, numa panela tapada, durante 1 hora ou mais até o arroz ficar cremoso. Como cozi ontem, hoje coloquei algum numa panela pequena, juntei um pouco de bebida de aveia, uma pitada de sal, algumas passas e deixei ferver uns minutos em lume brando. Depois foi só juntar os toppings. Se preferirem mais doce juntem geleia de arroz. Experimentem. Vão gostar 😋

Hy everyone!
Today's breakfast: a warm bowl of creamy brown rice porridge. I cooked it yesterday for an hour and a quarter with kombu seaweed (1 cup of rice for 7 cups of water). Today I added some oat drink, a pinch of salt and raisins and let it boil for some minutes. Added the toppings and ate it. You can add anything you like (cinnamon, rice syrup, nut butter, lemon zest). Brown rice is excellent for the large intestine and so rich in B group vitamins and minerals. Try it and you won't be sorry 😋

Bom dia!!!
Os frutos que comemos cá em casa têm muito a ver com a estação do ano em que estamos. Privilegiamos a fruta da época, produzida localmente. Por isso, no Inverno comemos sobretudo maçãs, pêras e cítricos. Normalmente, nada de bananas, papaias, kiwis, frutos vermelhos e outros frutos tropicais ou do Verão. A natureza é muito sábia e dá-nos, em cada estação, os alimentos que necessitamos para nutrir o corpo. Os frutos tropicais promovem o arrefecimento do corpo, além de que vêm do outro lado do mundo. Ainda que sejam cultivados por cá - andamos a trocar as voltas à natureza - não deixam de ser frutos do calor. Mas tenho ali um abacate que uma amiga me trouxe do Brasil e vai saber-me tão bem 😋. Já tenho saudades do calor 🌞

Ontem no meu stories desafiei-vos a adivinharem o ingrediente que dá cor a este arroz. Beterraba ou outro arroz? Muitos acertaram. E não, não é beterraba 😁. Usei arroz integral preto (1/3 cup) que misturei com arroz integral "normal" de grão curto (1/2 cup). Os dois têm o mesmo tempo de cozedura. Demolhei o arroz integral branco durante a noite para libertar os fitatos que dificultam a absorção dos nutrientes e lavei bem o arroz negro. Acrescentei alga kombu para os tornar mais digeríveis e cozi durante 40 minutos em água (2,5 x) e sal. Não ficou lindo? Agora vou ali fazer uma salada.

Can you guess what I used to give this beautiful color to this rice? Beet or another rice? I bet most of you said beet. No. I used black rice. 1/2 cup brown rice, 1/3 cup black rice. Cooked for 40 minutes in water with salt and kombu seaweed. And I just ❤️ the color.

Não é o almoço, mas é um snack. Bolinhas de amaranto. Super fáceis de fazer c/ 4 ingredientes. O amaranto é uma super semente ancestral da América Central e do Sul. Menos conhecida que a quinoa tem excelentes qualidades nutricionais, incluindo todos os aminoácidos essenciais, vitamina C, ferro e cálcio. É uma semente integral, sem gluten. Pode ser usada em papas de pequeno-almoço, sopas, saladas e farinha. Confesso que já tentei usar em grão e não resultou. Tenho que voltar a tentar. Mas estas bolinhas resultaram. E são práticas para comer como snack. Vi a receita no feed da @delight.fuel, mas usei manteiga de amêndoa em vez de manteiga de caju. Fiz assim:
-40 gr amaranto inflado
-140 gr manteiga amêndoa (ou caju)
- 1 c. sopa canela
- 1 pitada sal
Misturar tudo, formar bolinhas e colocar no frigorífico.

These amaranth balls are so simple to make (only 4 ingredients). Amaranth is a super seed from Central and South America. Less known than quinoa it has all the essential amino acids, C vitamin, iron and calcium. You can use it in breakfast porridge, soups, salads and flour. I've tried it in grain but it didn't work. I have to try again. But these balls worked. I saw the recipe in @delight.fuel but I used almond butter instead of cashew butter. You only need:
- 40 gr amaranth (popped)
- 140 gr almond or cashew butter
- 1 tbsp cinnamon
- 1 hint of salt
Combine all, form balls and cool it in fridge.

O meu jantar de domingo preferido: uma grande tigela de sobras. Arroz integral, feijão preto, vegetais assados (cenoura, couve-flor, beterraba). Tudo aquecido numa frigideira com um pouco de água no fundo e temperado com azeite e vinagre de maçã. Toppings: coentros e sementes tostadas. E a seguir...sofá 😊

Já almoçaram por aí? Esta é uma das minhas refeições preferidas. Muito simples e plena de sabor. Massa integral c/ cogumelos e espinafres salteados, tofu marinado e frito num fio de óleo de girassol e brócolos (bimi) salteados também. Por cima, para dar aquele toque crocante, sementes tostadas (de girassol, abóbora e sésamo, brancas e pretas). Nos salteados substitui o sal por molho de soja, que adoro 😋

Need a lunch idea? Keep it simple. Wholemeal pasta with sautéed mushrooms and spinach, marinated tofu fried in sunflower oil and sautéed broccolis. On top roasted seeds (sunflower, pumpkin and black and white sesame). I love the taste of soy sauce so I use it to saute and don't use any salt.

Eu tenho uma certa tendência para refeições coloridas 😁. Arroz preto (adoro), grão cozido c/alga kombu, hamburguer (de beterraba, quinoa e feijão branco), cenoura ralada e brócolos escaldados. Sabiam que as algas têm alta composição de ferro, cálcio, iodo e vitaminas. Pesquisas médicas recentes confirmaram que as algas ajudam a inverter o endurecimento das artérias, baixando a pressão sanguínea e ajudam na regressão de tumores. Cozer leguminosas e arroz integral com um pouco de alga kombu torna-os melhor digeríveis. E não, não ficam a saber a algas.

What is it about bowls that seem to invoke coziness and comfort? Meal prepped this tofu, veggie, and quinoa bowl with ginger miso dressing (from @sweetsimplevegan ) for dinners this week. I found that purple cauliflower at my local farmers market; it turns slightly blue after steaming but is a great way to get all those colors in your diet! •

Bom dia 😊
Hoje usei pera Rocha nas minhas papas e ficaram deliciosas claro. Primeiro fervi água e deitei-a a ferver sobre 4 c. sopa de flocos de aveia. Esperei 10 minutos, até toda a água ser absorvida (as papas ficam mais macias). Depois juntei mais água, 1/2 pera Rocha ralada, 1 c. sopa de passas picadas, pitada de sal, pitada de gengibre em pó e 1 c. café de óleo de coco e deixei cozer uns minutos, mexendo e acrescentando água. Caramelizei a outra metade da pera, numa frigideira com um pouquinho de óleo de coco e usei como topping, com sementes de abóbora e bagas de romã (portuguesa também). Ultimamente tenho cozido as papas só c/ água, mas as bebidas vegetais são sempre uma opção. Como sou gulosa depois da foto ainda acrescentei manteiga de amêndoa 😋

Domingo preguiçoso com papas de aveia quentes e redução de mirtilos. Usei mirtilos biológicos congelados que aqueci numa frigideira pequena com 1 c. sopa de água até amolecerem e libertarem este sumo maravilhoso. Estava tão bom!!! 😋

Já tinha comentado com a Mónica (@moniq_sweetreats) que iria experimentar a receita dela de creme de millet. Foi ontem. E como sobrou, hoje voltei a comer. Estava ainda melhor 😋. O millet (ou milho painço) é um cereal, boa fonte de minerais de fósforo e magnésio. Estudos recentes sugerem que o seu consumo regular está ligado a um menor risco de doenças cardíacas e certos cancros. É um excelente alimento para lidar com o frio e pode fazer maravilhas pelo vosso estômago e pâncreas. Cá em casa há sempre millet, mas nunca o tinha usado em papas. Ficou delicioso. Fiz a versão da Mónica com maçã e manteiga de caju (acabou-se o tahini). E acrescentei gengibre em pó. Como fiz ontem, hoje acrescentei bebida vegetal e aqueci em lume brando. Toppings: laranja (100% biológica da minha laranjeira), sementes de abóbora e passas.

Today's breakfast is a warm oatmeal with carob flour and raw cacao. Just add these 2 ingredients to your porridge and let it cook for a while. Choose your favorite toppings. I used cashew butter, goji berries and pumpkin seeds.

Hoje acordei com vontade destas papas: papas de aveia quentes com farinha de alfarroba e cacau. A farinha de alfarroba é ligeiramente adocicada e o cacau cru dá às papas este tom de chocolate. Ficam umas papas cheias de nutrientes, sem açúcar, sem gorduras más, sem culpa. Numa panela pequena coloquem 4 c. sopa flocos de aveia integrais (eu usei finos). Cubram com água a ferver (2/3 cm acima). Deixem repousar 10 minutos até toda a água ser absorvida. Também podem cozer diretamente, mas com este método as papas ficam mais macias. Passados os 10 minutos, mexam, acrescentem água ou bebida vegetal, uma pitada de sal, 1 c. chá de óleo de coco, 1 c. sopa de passas, 1 c. sobr. farinha de alfarroba, 1 c. sobr. cacau cru 100% e deixem cozer 5/10 minutos. Mexam com frequência e acrescentem líquido até à consistência desejada. Divirtam-se com os toppings. Eu adoro manteigas de frutos secos e aqui usei manteiga de caju. Mas também gosto de manteiga de amêndoa e de amendoim.
As papas não ficam muito doces. Por isso se quiserem um extra de doçura usem um adoçante natural, geleia de arroz ou malte de cevada, ambos com índice glicémico mais baixo e que resultam da fermentação natural do arroz e da cevada.
Em 2017, os portugueses consumiram menos 5.500 toneladas de açúcar, muito devido ao acréscimo do IVA nas bebidas açucaradas. 5.500 toneladas é um número assustador, mas não é suficiente. O açúcar, consumido com regularidade, é puro veneno para o nosso corpo. E há alternativas saudáveis e deliciosas.

As papas de aveia são o meu pequeno-almoço preferido. Quentinhas, aquecem-me por dentro e são altamente reconfortantes. Eu uso flocos de aveia finos integrais e junto sempre sementes. As sementes, além de muito ricas nutricionalmente (são fonte de proteína, vitaminas, minerais, fibra, antioxidantes, gordura insaturada), ajudam a retardar a absorção do cereal, tornando a digestão mais lenta. Assim, a energia é libertada lentamente no sangue, o que nos dá uma sensação de saciedade durante mais horas.
Estas papas foram cozidas em água, com raspa de limão, pau de canela, passas e uma pitada de sal. Como toppings usei sementes de abóbora, sementes de cânhamo e manteiga de amêndoa.
Começar o dia assim é tão bom 😊😋.

[English below] Hoje cheguei ao trabalho e deixei cair a marmita com o almoço. De vidro, partiu-se em mil pedaços. Nada se aproveitou. Felizmente consegui vir a casa. Comi restos. Mas restos destes deixam-me feliz. Feijão branco, abóbora assada polvilhada com sementes tostadas, brócolos salteados e arroz de beterraba. Querem saber como fazer o arroz?
4 doses
1 chav. arroz basmati
1 beterraba pequena
1 dente alho
1 c. café de açafrão-das-indias
2 chav. água
Sal, azeite
1/2 caldo legumes biológico
Descascar e ralar finamente a beterraba. Aquecer uma panela c/ um fio de azeite e saltear o arroz, o alho inteiro e o açafrão durante 2 minutos. Juntar a água, a beterraba, o sal e o caldo de legumes. Mexer bem. Deixar cozer 10 minutos. Retirar o alho. Podem servir c/ bagas de romã.

Today I arrived work and my glass bowl with my lunch fell and broke. I came home and ate leftovers. But I like leftovers. White beans, roasted pumpkin with toasted seeds, sautéed broccolis and beet rice (recipe below)
4 portions
1 cup basmati rice
1 small beetroot
1 garlic clove
1 coffee spoon turmeric
2 cups water
Olive oil, salt
1/2 organic vegetable stock
Peel and grate the beet. Warm up a pan and with a strand of olive oil sautee the rice, garlic and turmeric for 2 minutes. Add the water, beet, salt and the vegetable stock. Stir. Let it cook for 10 minutes. Remove the garlic. You can serve it with pomegranate berries.
