Is it the corners where both worlds collide and trigger a super crunchy, slightly burned but intens cheese flavored memory of your childhood? I think. I think it's all of those things combined. For all of us.
I know fancy pancy focaccia tuna melts and Turkish umami soy grills may be cool these days. But really. The simple ones. The ones that are made the way a grilled cheese was once intended. Those ones are the bomb.
