🎼Dem Bones, Dem Bones!
Roasted dark and ready for the stock pot!
The leg bones of three deer, minus some left in shanks, a couple whole shoulders, and some lost to bullet damage.
I roast the veg in the same pan after removing the bones and then everybody in the pool with a small can of tomato paste and bouquet garni of parsley, thyme, and bay leaf for about 24 hours.
And then I can make the Sauce Espagnole!
