Home-fried chicken strips! So yummy, especially when dipped in this simple honey dill sauce!!
3 boneless/skinless breasts, pounded out, and cut into strips
1/2 C whole wheat flour
1 tsp each of garlic powder, onion powder, salt, parsley // sprinkle of paprika & chili flakes for heat
2 eggs, beaten
1.5 C Panko crumbs
Heat vegetable based oil in large pan on stove (I use enough to cover at least 1" from bottom - so they don't stick!)
-- probably not the smartest move but my oil is ready when a drop of water sizzles in it. Typically medium heat for our stove.
Coat each strip in mixtures 1, 2, 3, then place in hot oil. There's probably some disclaimer about internal temperatures for chicken... I cook till golden brown, flipping once or twice, for about 6 minutes total. Remove and place on paper towel to remove excess oil!
HONEY DILL SAUCE (AKA THE BOSS):
1/3 C honey
2/3 C mayo
2 tbsp dill (more or less for your taste)
