6 large red bell peppers;
3 cups cooked Garlic and Oil couscous;
1/3 cup chopped fresh flat-leaf parsley;
3 tablespoons chopped fresh mint;
4 tablespoons olive oil, divided (2/2);
4 tablespoons fresh lemon juice, divided (2/2);
2 teaspoon honey, divided (1/1);
1 1/4 teaspoon salt;
3/4 teaspoon ground cumin;
1/4 teaspoon crushed red pepper;
4 cups chopped skinless, boneless any chicken leftover;
4 -5 oz goat cheese;
8 cups baby arugula. 🔷️Directions: ✔Preheat broiler to high. ✔Prepare pan with foil. Cut off top third of each pepper (with stem); reserve 6 pepper tops. Remove seeds and membranes from peppers. Arrange peppers on their sides on prepared pan. Coat with cooking spray. Broil 12-14 minutes or until charred, turning after 4 minutes. Place 6 peppers, cut sides up, in an 8-inch square glass or ceramic baking dish.
✔Combine couscous, parsley, mint, 2 tablespoon oil, 2 tablespoon juice, 1 teaspoon honey, 1 teaspoon salt, cumin, crushed red pepper, and chicken in a medium bowl. Stir in goat cheese. Spoon chicken mixture into each pepper in dish. Top peppers with reserved 6 pepper tops. Broil 4 minutes.
✔Combine remaining 2 tablespoon oil, remaining 2 tablespoon lemon juice, remaining 1 teaspoon honey, and remaining 1/4 teaspoon salt in a bowl. Add arugula; toss. Serve with stuffed peppers.
