Every time I look back at a dessert I made, all I see are the things I missed in the moment, or the things I so obviously should have done to make it better, but I guess that’s part of learning and progressing. It’s so obvious when you look back at the picture you took! But that’s what I like about storing my pictures here on Instagram, it’s my way of recording what I’m up to, and seeing where I can get better. It’s not all picture perfect. For me, it’s a record and a visual tool to improve. Most days we are so busy here on board, that finding the time to fit in fancy bits of prep coupled with a quick service, quick plating, means that taking a snap of a dessert is really the only way to properly try to improve .
