Red curry 🍛 with vegetables and brown rice vol.2

And curry again, today it’s going to be red curry 🍛 with vegetables and brown rice.
Ingredients: brown rice 🍚, red curry, coconut 🥥 milk 🥛, purple potatoes 🥔, eggplant 🍆, celery, carrot 🥕, garlic, shallot, black and white sesame seeds, salt🧂, pepper.
1. Boiled or steam brown rice.
2. For curry: chopped shallots and garlic and start frying with coconut oil till golden color, add chopped carrots and fry it together for 5-7 minutes after add chopped celery, fry for 2-3 minutes more. Pour coconut milk and add red curry paste. Let it cook for 10 minutes if need add more salt and pepper.
3. Cut potatoes and eggplant into dices and bake it in the oven.
4. Plate rice from one side curry from other, add rest of the ingredients. Enjoy your meal ;)
