I seriously love Thanksgiving, it’s probably my favorite holiday. My family is loud and so much fun, we always have a blast cooking all day, running around with my 5 nephews, and enjoying some cocktails together with dinner. But my favorite part about Thanksgiving dinner food? for me, it’s all about the appetizers and dessert! ⠀
I put together a huge list of all my best Thanksgiving recipes, from appetizers, sides and dessert, all up on the blog. You can head to the link in my bio, or just settle for this awesome vegan pumpkin pudding with coconut whipped cream, that is seriously SO easy to make, and doesn’t take up any oven space.⠀
Here’s how you make it:⠀
1. Combine a can of pumpkin purée, 1 avocado, 2 tablespoons of maple syrup, 1 teaspoon raw honey (use more maple syrup to make vegan), 1 tablespoon almond butter, 3 tablespoons of pumpkin pie spice, 1 tablespoon cinnamon and a pinch of salt in your food processor. Blend until completely smooth! ⠀
2. Combine the solid part of a can of coconut milk with 1 teaspoon vanilla and 1 tablespoon vanilla in a bowl and whisk with a hand mixer until it forms a whipped cream. ⠀
3. Top the whipped cream over the pudding and enjoy! ⠀
