I get someone not caring about animals. I get someone putting taste over their own health. I obviously donβ€˜t agree with any of those attitudes but I can understand them to a certain extent. But how can someone see what is happening to our planet and choose to ignore it? Especially if it would be so easy to at least make a small change. You wouldnβ€˜t even have to become 100% vegan, just significantly reducing your meat consumption would make such an impact! How do you guys feel about this? Soupa Simple Soup! (I'm sorry, sometimes you just have to make terrible puns πŸ˜‚)This is my creamy tomato & red lentil soup. The creamy element comes from blending a piece of bread, I told you it was simple

One tablespoon of non-dairy margarine
One small brown onion, sliced
Two cloves of garlic, sliced
500ml hot vegetable stock
400g/14oz chopped tomatoes
100g/3.5oz red lentils, rinsed
One piece of white bread, torn into pieces

Melt the margarine in a large saucepan over a medium heat, once melted add the garlic and onion. Cook for five minutes

Add the stock, tomatoes and lentils, cook with a lid on for 25 minutes

After 25 minutes, add the bread and blend until smooth

Mince Pie Recipe

πŸ”Έ1 cup raisins
πŸ”Έ1 cup sultanas
πŸ”Έ1 cup currants
πŸ”Έ1 1/2 cup orange juice
πŸ”Έ2 apples (chopped)
πŸ”Έ3 tsp mixed spice
πŸ”Ήadd all ingredient to a pan on the stove and cook on medium until everything is nice and soft, be sure to stir every now and then so it doesn’t stick to the bottom

πŸ”Έ250g plain flour
πŸ”Έ50g Apple sauce
πŸ”Έ80g sugar
πŸ”Έ7-10 tbsp cold water
πŸ”Ήadd the flour, apple sauce and sugar to a bowl
πŸ”Ήadd 1 tbsp of the water at a time until it starts to ball up
πŸ”Ήroll it out thin on a floured surface and use a cutter to create your pie base and put in to a shallow muffin/cupcake tray
πŸ”Ήonce you have done the bases roll out the scrap pastry again for your tops you can use a different fancy cutter it just a normal one
πŸ”Ήuse some plant milk to glaze the top
πŸ”Ήbake in a pre heated oven for about 20 minutes at 220c/425f/gas mark 7
πŸ”Ήtake them out of the tin once cooked as they will start to sweat

Apple Sauce Recipe

πŸ”Έ2 tbsp lemon juice
πŸ”Έ1 1/2 tbsp sugar
πŸ”Έ2 tbsp cold water
πŸ”Ήpeel, core and chop your apples and cook in a pan with the lemon juice and water on the stove at medium heat for about 15 minutes until soft
πŸ”Ήstir in the sugar and allow to cook down a bit then transfer to a blender (or use and immersion blender if you have one that’s what i did) and blitz until smooth

Because the limit on smoothie consumption does not exist. To any of my friends, my roommates, my teammates, my coworkers, or my classmates it will come to no surprise to hear that I'm in a long-term committed relationship with my @thenutribullet I use it on average 3 times a day. I will use it to make breakfast, lunch, dinner, snacks, and even dessert! Often times you'll see me sipping on a smoothie in my 8:30 am class or driving in the car with smoothie in hand, and you don't see me with my smoothie it's probably cause I already drank it and it's in my bag.

Vanilla Almond Berry Smoothie:

1 cup mixed berries (blackberries, blueberries, raspberries)
1 cup spring mix lettuce
1 banana
1 tbsp almond butter

Water added until desired consistency is achieved

Do you ever get smacked in the face with gratitude? Do you ever find yourself undeservingly gifted with a blessing even amidst a season where your heart is grumpy? My sweet momma came to my house yesterday to clean to give me a break from the overwhelming schedule and because I have an irrational fear of the mice in our house. My heart has been grumpy. I know I don't deserve one lick of kindness. And I've been condemning myself as unworthy. Yet I am filled with nothing more than gratitude in the moment. Here I find myself learning that servanthood must trump feelings of being ill equipped, and that our expressions of kindness and compassion and generosity are more important than accepting our icky feelings. We have been lavished with such love, even in our most undeserving states. Express it, bundle it up, overfill to the brim with that knowledge and spread it all around.
