Remember these? Soft Apple Spiced Oat Cookies. Sometimes I find it helpful to look back at my old recipes for inspiration. Makes me want my kitchen finished more than ever...I need to get back into it! Here’s the recipe Ingredients
1 cup of gluten free oats
1/2 cup of buckwheat flour or rice flour
2 tsps of gluten free baking powder
1 tbsp of white chia seeds
1/2 tsp of Himalayan rock salt
1 tsp of ginger
1 tsp of nutmeg
1 tsp of cinnamon
30g of butter (from grass fed cows)
1 large free range egg
1/2 cup of brown rice syrup or honey
1 cup of diced apple
Melt the butter Ina bowl and add the syrup or honey, the egg and mix well. Add all of the dry ingredients to the mixture and stir until combined. Finally add the diced apple and stir. Cover the mixture and pop in the fridge for an hour.
Pre heat oven to gas mark 5 and line a baking tray with baking paper. Put tablespoon size balls on the sheet and press down slightly. Bake for about 15/20 minutes. When they're done let them cool on the baking tray before moving them to your cooling rack. Cool then store in the fridge in an airtight container.
i got this @sofreechocolate white chocolate bar from vegfest and it legit tasted identical to what i remember milkybar buttons tasting like!! so nice to see a vegan white chocolate as they're less common, i just wish the bar was bigger ♀️ on another note though, the sofree chocolate stand was one of mine and @natsveganfitness's fave stalls because the chocolate free samples were such big chunks we were at vegfest for 7 hours ish and so walked past their stall many times and enjoyed lots of tasters so thank you for that guys hahaha this company is the best!!
