Vegan chickpea wraps by @amelietahiti. Ingredients:
1 can chickpeas, rinsed & drained
2 ripe tomatoes, cubed
1 small cucumber, cubed
2 tbsp chives, ciseled
3 tbsp soy yoghurt
1/4 tsp salt
1 tsp dijon mustard
1 tsp paprika
1 tbsp nutritional yeast
pepper
👉🏼Method :
1. rinse & drained the chickpeas (if you want a better digestion, you can peel off the skin but that’s an extra 10 minutes!)
2. flake them with a fork (or clean hands)
3. add veggies and mix.
4. add spices and yoghurt and mix again
5. set in fridge about 15 minutes so flavour gets together
✨ WRAP RECIPE 🌯
1 cup all purpose flour
1 tbsp olive oil
1/4 tsp salt
1/4 cup water
Method : simply mix & kneed with one hand until a dough super elastic forms. Adjust flour/water. Set 10 minutes. Then divide in 2 and roll out in very thin wrap (use flour to prevent sticking). Cook 2 minutes each side on hot pan. Keep in clean dishtowel. Use right away or damp the towel with water and microwave 20 sec to make soft again!
Here it’s served with cabbage, lettuce avocado & sprouts!

I’ve been thinking a lot about how I want 2019 to go for me. I want to focus more on using my time mindfully, and really trying to get the most out of my 24 hours per day. I’ll share things that have worked for me as well as things I’m learning in the present. I work a full time corporate job, and have found way to make eating healthy and working out part of my daily life, but I’d like to explore new ways to make the most out of my time, energy, and resources.

Here is a yummy chia pudding made with dates as a sweetener instead of honey, agave or stevia.

Ingredients
2 cup almond milk (see homemade recipe below or use store brought)
1 cup soaked dates (keep soaking water and ff you are calorie conscious, substitute part of dates with stevia) 
75g chia seeds 
1/2 vanilla bean scraped or 1/4 tsp pure vanilla
Home Made Almond Milk
Soak 1 cup almonds in 2 cups water. Leave for up to 2 days or until almonds are plump. Drain from water and rinse well. Pop into blender with 2 cups of water and blend for 2-4 mins. Put almond meal into a cheesecloth. Squeeze and press into a bowl and you should get around 2 cups of almond milk.
Method
Blend in soaked dates with almond milk. Add in vanilla. To this add chia seeds and mix well. Keep stirring every 5 mins for about 15 mins. 
Pour the pudding into serving dishes, top with chopped pistachios and let them sit for another hour at least, the longer you leave them to sit the better the consistency of the pudding. This can be nicely served the next day too.

For the kale slaw: 1 cup packed kale, de-boned, rinsed & chopped 1 tsp olive oil pinch of salt 2 tbsps minced red onion 1 large radish, thinly sliced 1/2 tsp apple cider vinegar 1 tsp lime juice
For the sweet potato: 1 large sweet potato, chopped into 1-inch squares 2 cloves garlic, minced 1 tbsp olive oil 1/2 tbsp chili powder 1/2 tbsp ground cumin 1/8 tsp paprika 1/2 tsp salt 1 15-oz. can garbanzo beans, (drained, rinsed 3& de-cased)
For the quinoa: 1/2 cup uncooked quinoa 1 cup water 2 tbsps fresh cilantro, finely chopped 1 tsp lime juice pinch of salt
To make the tacos: 8 small flour tortillas 1 large avocado salsa or hot sauce
For the kale slaw: Place kale into a medium mixing bowl. Add olive oil & massage with your hands for 3-4 minutes or until kale breaks down & becomes soft. Add the rest of the ingredients for the kale slaw to the bowl & mix. Make sure all ingredients are combined & place into the fridge.
For the sweet potato: First, preheat oven to 400ºF. Place sweet potato & garlic onto a baking sheet. Drizzle w/ olive oil & then season with chili powder, cumin, paprika, salt, & pepper. Toss & make sure all ingredients are combined & sweet potatoes are covered with olive oil & spices. Roast for 10 minutes (follow us at @veganrecipevideo while waiting!). Remove from oven & add garbanzo beans to the baking sheet. Toss with all ingredients & roast for an additional 15 minutes. Begin to prepare cilantro lime quinoa & then remove sweet potatoes from the oven.
For the quinoa: Place water & quinoa into a medium saucepan over high heat. Bring to a boil & then turn heat to low, cover, & let simmer until all water has been absorbed (~ 20 mins). Next, place quinoa into a mixing bowl & add cilantro, lime juice, & salt. Mix well.
Last step: Evenly distribute kale, sweet potatoes, cilantro lime quinoa & an avocado onto tortillas & enjoy with your favorite salsa or hot sauce.

Did you know that dried fruit can be an excellent source of vitamins and minerals?

The drying process removes the water content and essentially concentrates the nutrients into a smaller space. Yes, that includes more sugars and calories, but also phytonutrients and fiber.

Drying can destroy some nutrients like Vitamin C, however, a majority of them are preserved in the drying process.

If you're like me and not getting your recommended daily servings of fruit, try adding dried fruit to your diet!

You should, however, avoid dried fruits with the term "crystallized" on the packaging. That typically means sugar was added. Choose unsweetened varieties. The Dietary Guidelines state that dried fruit is considered a whole fruit and does not need to be limited like added sugars. So don't fear the sugar content as long as it's natural sugar.

And next time you're hesitant to have some dried fruit, think of all the concentrated nutrients you'll be getting 😉

Second week of having to meal prep was a success! We just switched over to the 12 hour shifts, and I love it(!), but at the same time I barely have anytime to cook or pack a lunch when I'm home.
I am also excited because I'm finally starting to create my own recipes! This weeks fun trials were juice pulp bread, and vegan diy ranch.😍 Both of which turned out great! I really wanted kale chips but there was a mishap with the timer so....yeeeaaahhh... R.I.P. Kale chips😢.

Giving up meat really makes miss BBQ sometimes, especially when I go visit my family in Georgia for a week and it’s all I see 😫 BUT BBQ Jackfruit really satisfies those times when I’m craving something savory and smoky. It’s the easiest thing to make, and @traderjoes finally has their canned jackfruit back in stock!! It may not be BBQ season but you can make this in the oven in a snap. Here’s the recipe: ... 1 20-oz can of jackfruit in brine (drained, rinsed, broken apart), 1/2 diced onion, 3 cloves minced garlic, 1/2 cup veggie broth, 1/2 cup BBQ sauce.
... Preheat oven to 400 degrees. In a large pan, sauté the onion in olive oil over medium heat for a few minutes. Add garlic and cook for an additional minute. Add the jackfruit and mix well. Add the veggie broth and simmer for about 10 minutes until broth is absorbed. Spread the mixture on a baking sheet and cook in the oven for 10 minutes. Drizzle BBQ sauce on top and cook for 10 minutes more, until browned. Toss the jackfruit and BBQ sauce together and eat up 👌🏾
