1/2 cup coconut milk (more as needed)
1 1/2 tablespoons red curry paste
1 tablespoon curry powder
1 clove garlic
1 teaspoon sea salt
Blend up for peanut sauce:
3/4 cup peanut butter
1/4 cup soy sauce
1/4 cup rice vinegar
1/4 cup water
2 tablespoons maple syrup

Omg, y'all have no idea how excited I am about this meal prep I just received from @golenesvegankitchen I've already taste tested a few things and it is 休 I requested a mix of beans, veggies, some jackfruit and a little tofu and asked for spicy! I also ordered a dozen tamales, 4 of each flavor. (Flavors listed on last pic) I tried the Salsa Rojo and it is 休

Coconut Chickpea Masala by @amelietahiti. Recipe serves 3-4:
2 shallots or 1 big red onion, minced
3 cloves of garlic, minced
a thumb of fresh ginger, grated
1 tbsp masala spice
1 tbsp turmeric spice
1 tsp ginger powder (I put 1 tbsp on the video but would really suggest 1 tsp if you also use fresh!)
1 tsp cumin
1/4 tsp black pepper
1 tsp curry paste (optional but cool!!)
1 cup bell pepper of choice (i use frozen or 1 fresh!)
1 normal can tomatoes or 3 fresh (i use cherry i like the taste better!), DRAINED!
1 normal can chickpeas, rinsed & drained
1 normal can full fat coconut milk
2 tbsp coconut flour (helps thicken)
1 lime
1 handful fresh cilantro
1. start saut矇 onion/shallot with all the spices. no oil no water. once really sticking to the pan you can add a drop of water!
2. Add in bell pepper, saut矇 5 minutes more.
3. Add tomatoes & chickpeas, mix well. Add 3/4 of the can of coconut milk. Mix. Add coconut flour, simmer for 15 minutes, stirring occasionally.
4. Off heat, once thickened, add lime juice & cilantro. Serve with rice/couscous and/or naan & a dollop of remaining coconut milk

Vegan tacos are on of my staples. These are simple, delicious, and perfect for building lean muscle. Ingredients are red lentils cooked and mixed with sweet corn bell pepper and spelt flower to thicken it up. Seasoned with pink salt pepper garlic and onion order paprika turmeric and a dash of cayenne. Put that on organic corn tortillas and top with onion tomato avocado cilantro and mushroom. Happy meal prep! 漎儭 Cauliflower rice with parsley and steamed kale - I mixed in some maple yam paste for extra yum! Topped with purple saurkraut.
