Sweet potato tacos by @fitfoodiefinds. Ingredients:
For the kale slaw: 1 cup packed kale, de-boned, rinsed & chopped 1 tsp olive oil pinch of salt 2 tbsps minced red onion 1 large radish, thinly sliced 1/2 tsp apple cider vinegar 1 tsp lime juice
For the sweet potato: 1 large sweet potato, chopped into 1-inch squares 2 cloves garlic, minced 1 tbsp olive oil 1/2 tbsp chili powder 1/2 tbsp ground cumin 1/8 tsp paprika 1/2 tsp salt 1 15-oz. can garbanzo beans, (drained, rinsed 3& de-cased)
For the quinoa: 1/2 cup uncooked quinoa 1 cup water 2 tbsps fresh cilantro, finely chopped 1 tsp lime juice pinch of salt
To make the tacos: 8 small flour tortillas 1 large avocado salsa or hot sauce
For the kale slaw: Place kale into a medium mixing bowl. Add olive oil & massage with your hands for 3-4 minutes or until kale breaks down & becomes soft. Add the rest of the ingredients for the kale slaw to the bowl & mix. Make sure all ingredients are combined & place into the fridge.
For the sweet potato: First, preheat oven to 400ºF. Place sweet potato & garlic onto a baking sheet. Drizzle w/ olive oil & then season with chili powder, cumin, paprika, salt, & pepper. Toss & make sure all ingredients are combined & sweet potatoes are covered with olive oil & spices. Roast for 10 minutes (follow us at @my_vegan.recipes while waiting!). Remove from oven & add garbanzo beans to the baking sheet. Toss with all ingredients & roast for an additional 15 minutes. Begin to prepare cilantro lime quinoa & then remove sweet potatoes from the oven.
For the quinoa: Place water & quinoa into a medium saucepan over high heat. Bring to a boil & then turn heat to low, cover, & let simmer until all water has been absorbed (~ 20 mins). Next, place quinoa into a mixing bowl & add cilantro, lime juice, & salt. Mix well.
Last step: Evenly distribute kale, sweet potatoes, cilantro lime quinoa & an avocado onto tortillas & enjoy with your favorite salsa or hot sauce.
