When I saw @kitehillfoods almond milk ricotta @commongroundcoop after having noticed Jason Wyrick's (@thevegantaste ) simple hack for vegan queso fresco, it was destiny. Making this queso really is simple: you crumble up the ricotta, sprinkle a bit of salt on it, then let it sit out for 6 hours. It is very nice! I did a hack of my own, as well, purchasing a sofritas bowl from @chipotlemexicangrill and making tacos out of it using my own tortillas--and of course the queso! Delicious. Thanks, Jason, for the queso idea and for many recipes in the Vegan Mexico book, some of which should be appearing in this space soon.
