Vegan Omelette with tamari mushrooms, mashed avocado and cashew cream cheese by @happyskinkitchen 💛

Recipe:⠀ Ingredients For the omelet
5 ounces firm silken tofu (drained and gently patted dry // 5 ounces yields ~3/4 cup)⠀ 2 Tbsp hummus⠀
2 large cloves garlic (minced)⠀ 2 Tbsp nutritional yeast⠀
Salt and black pepper⠀
1/4 tsp paprika⠀
1 tsp cornstarch or arrowroot powder⠀ ⠀
For the filling:⠀ Tamari mushrooms, kale, mashed avocado and cashew cream cheese⠀ ⠀
Instructions⠀
Preheat oven to 375 degrees F (190 C).⠀ Prep veggies, drain and dry tofu, and mince garlic. Set aside.⠀ Heat a small-to-medium, oven-safe skillet over medium heat. Once hot, add olive oil and minced garlic and cook for 1-2 minutes or until just lightly golden brown.⠀ Transfer garlic to food processor, along with remaining omelet ingredients (tofu – cornstarch) and mix to combine, scraping down sides as needed. Add just a touch of water to thin – 1-2 Tbsp at most. Set aside.To the still-warm skillet over medium heat, add a bit more olive oil and the veggies. Season with salt and pepper and sauté to desired doneness. Set aside.⠀ Remove skillet from heat and make sure it’s coated with enough oil so the omelet doesn’t stick. spoon on the omelet batter, spreading it gently with a spoon or rubber spatula, being careful not to tear or cause gaps. The thinner and more evenly you can spread it the better. So you may not end up using it all.⠀ Cook over medium heat on the stove top for 5 minutes until the edges start to dry. Then place in oven and bake until dry and deep golden brown – 10-15 minutes. The longer it bakes the less soft/wet it will be, so if you prefer a more “well done” omelet, cook closer to 15 or more.⠀ Using an oven mitt, Carefully remove from oven with oven mitt and fold over gently with a spatula. If it doesn’t want to fold, you can serve it as a frittata or scramble!

Happy Aloha Friday everyone 🌺Another comfort food dinner comes in a form of a veggie chow fun😁 The best part about a stir fry noodle dish is that you can add as much veggies as your heart desires, and you can have dinner ready in 15 minutes or less, depending on your chopping skills 😬

INGREDIENTS:
1 Tbsp cooking oil
1/2 onion, sliced
8 oz oyster mushrooms (or any mushrooms), chopped or sliced
1 inch fresh ginger, peeled and cut into thin matchsticks or minced
3 cloves garlic, cut into thin slices or minced
1 large carrot, peeled and cut into thin slices
1/2 napa cabbage, shredded
1 bunch mustard greens, chopped
1 pound store bought wide chow fun noodles
1 bunch of scallions (green part only), chopped

SAUCE:
1/3 cup soy sauce
2 Tbsp sesame oil
1 Tbsp rice vinegar
2 Tbsp pure maple syrup, agave or sugar

Whisk sauce ingredients in a small bowl and set aside.

1️⃣Preheat a wok or a large non stick pan to high.
2️⃣Add cooking oil, followed by the onions. Stir constantly, to not let the onions burn. Add mushrooms and continue to stir constantly for about 1 minute. Add ginger and garlic and cook another 30 seconds, stirring constantly. Add carrots and continue cooking on high for 1 minute, keep stirring. Add the shredded cabbage, mustard greens, noodles and sauce and continue to cook on high, tossing everything together with tongs, until the greens are wilted, the sauce thickens, and everything is nicely coated, about 1-2 minutes.
3️⃣At the very end of cooking, add the chopped scallions, toss a couple of times and turn off the heat. Transfer to a serving dish and enjoy!

It is very possible to be an unhealthy vegan, who eats too much processed vegan foods, like mock meats and cheeses. Even Oreos, french fries, many breads and pastas, and cereals are considered vegan.
From day one of my journey, I decided I would eat a plant-based diet. Yet, from time to time, I incorporate some processed ingredients to enhance flavors and textures. Here, I have squash, broccoli, mushroom, and onion. For creaminess, I added a couple tablespoons of Tofutti imitation sour cream, and Daiya vegan cheese, and a bit of almond milk.

The summary of ALL of the research and findings is that MSG is perfectly safe for consumption as also approved by the FDA - considering that typically its estimated, in the US, the average adult consumes 13 g of glutamate per day from food sources & about 0.55 g from added MSG. By contrast, in some Asian countries, the average adult consumes at least 2.2 g of added MSG. Its a stable of Chinese food & cooking so thats around 1.4 billion people safely consuming it daily.

In ALL of the research studies the only ones to that reported ill effects from MSG had administered large doses (over 3 g) without food over a short period of time, and even then, the ill effects were mild and temporary.
-
For example, in one study on the effect of MSG on serum insulin levels, they gave subjects a single oral 10 g dose of MSG without food. TEN GRAMS! Have you ever put 10g of salt on your food? (Remember, the current average MSG consumption ADDED to food is 0.55 g per day, nowhere near 10g). Such doses would be hard to reach by eating foods with added MSG in a real-world setting (and it’s very unlikely you would swallow such high doses without food).

Regardless, why MSG having an affect on insulin is not even an issue. If energy intake is lower than energy expenditure, No matter how high insulin is, you will lose weight as The INSULIN response to a meal will never supersede the weight loss affects of a caloric deficit.

In the vast majority of short-term trials (less than 24 hours), MSG did not affect caloric intake. Long-term studies reported that MSG had no effect on food intake or body weight, except maybe a small one in the elderly.

The conclusion of the findings from all studies is that "There is a lack of trial evidence indicating a detrimental effect of MSG for the general population, and some evidence suggests potential benefits for elderly people with appetite issues.”

TEMPEH SUSHI SANDWICH made by @plant_proof using the @organicvillagefood tempeh 😍 Unfortunately it is hard to find tempeh in German stores so I hope this will change soon because I love tempeh 😋 Tempeh is like tofu but the soy (or another legume) is fermented 👌🏼

Ingredients: 
1 cup cooked brown rice 
Sushi rice seasoning 
1 sheet nori 
1 x chickpea and linseed tempeh sliced through the middle then cut to make a 10cm square (or whatever organic Non-GMO tempeh you can source locally) 
and shallow fried in olive oil until golden brown (1 tsp is all you need or bake if you want to go oil free). 1/3 cup thinly sliced grated carrot 
½ cucumber slice thin 
½ avocado sliced thin
-⠀⠀⠀⠀
Method: 
1. Cook brown rice until well cooked then add sushi seasoning and allow to cool. 
2. To assemble sandwich place nori sheet shiny face down on a piece of glad wrap 
3. Place ½ of the rice onto the centre of the nori sheet in a 10cm square at a 45 degree 
angle. 
4. Place Tempeh on top of rice then layer remaining ingredients. 
5. Fold corners of the nori sheet into the centre to create a square. 
6. Gather plastic wrap around sandwich and place seam side down in fridge for 10-15 min. 
7. With a sharp wet knife slice through centre of the sandwich

Lasaña de zapallos italianos vegana ❤️, para esta lasaña necesitan tres zapallos italianos cortados en láminas muy finas y hidratados en agua hirviendo cerca de 10-15 minutos (ojo no cocinarlos solo hidratarlos que básicamente es remojarlos en agua), salsa boloñesa elección a la mía le puse carne de soja (una taza de carne de soja hidratada) champiñones (una taza), cebollín (un cebollín), ajo (tres dientes), zanahoria 🥕 (dos zanahorias ralladas) y salsa de tomate 🍅 (dos sobres de salsa) para el pino deben sofreir todos los vegetales y carne de soja y luego incorporarles la salsa de tomate 🍅), queso Vegano yo usé la marca mamá mozza que compre un almacén llamado alma salem este quesito lo rallan y queda listo para usarlo.
Lo que harán será hacer capas de zapallo, salsa boloñesa un poco de queso y nuevamente zapallo, salsa y queso así hasta terminar en la última capa de queso 🧀 Luego deben llevar su lasaña al horno por 20 minutos y finalmente pueden sentarse a disfrutar 💚 #almuerzosequilibrioconsciente
