Vegan, glutenfree mac 'n cheeze with shiitake bacon (recipe below) ๐Ÿ’š
Shiitake bacon

Approx. 1/2 cup

10 shiitake caps, sliced into thin strips
2 T oil of choice
1 t misopaste
Himalayan sea salt, to taste
Lots of freshly ground black pepper
1/4 t ground coriander
3/4 t smoked paprikapowder

Mix together the marinade in a bowl. Stir in the shiitakes. Cover and leave for 12-24 hours. Bake in a skillet with some oil on medium heat until crunchy. Serve in vegan burgers, on pizza, with tofu scramble or on creamy pasta dishes. Enjoy!

Tortino di #porridge freddo preparato con fiocchi di avena, fiocchi di miglio, farina di riso dolcificato con marmellata di albicocche.
Toppato con questa cremina da leccarsi i baffi. Cacao amaro, farina di carrube, olio di cocco, marmellata di fragole, acqua. Tutto mescolato assieme. Ma che ve lo dico a fare?? Provate e ve ne innamorerete!! ____________________________________________

Today I've got chocolate + hazelnut milk oats topped with ๐ŸŠ and chocolate orange hazelnut butter from @wyldsson (#PRSample). It's not overpoweringly orangey but it tastes amazing, especially when melted onto a bowl of warm oats #HugInABowl (even though it's super sunny outside)!

I've made some chocolate cups with it in the middle as well and my boyfriend was very impressed at the soft center even though they was so easy to make!

Patatas rellenas de judias y espinacas al limon๐Ÿฅ”๐Ÿ‹๐ŸŒฑ RECETA:
โ–ซ๏ธCocer 3 patatas al horno envueltas en papel de aluminio durante unos 45 minutos. โ–ซ๏ธSofreir 5 dientes de ajos laminados con aceite un poco picante. Aรฑadir 400g de judias blancas cocinadas, aceitunas kalamata troceadas y la ralladura de un limon. Aรฑadir a continuacion 400g de espinacas frescas y el jugo del limon. Dejar cocinar unos minutos.
โ–ซ๏ธPartir las patatas por la mitad y rellenarlas con las judias. Servir con una cucharada de creme fraiche o de yogur de soja con pimienta espolvoreada por encima.

Alex and I made jokes how we should try eating a different curry every day of the week. Then I thought about it and actually really liked the idea. I mean, think about all the possibilities! There can be chickpeas, or cauliflower, sweet potatoes, lentils, green beans and the list goes on and on. Who else here loves curry as much as we do?
We are doing our best to get on track with the recipes on our blog and since the weather should be pretty bad this weekend, we are super optimistic that we will be catching up with our to do list. So stay tuned, this tikka masala recipe is awesome!

BANANA ORANGE BREAD
Do you need some inspiration to make something special for the weekend? This bread is super yummy, perfect for breakfast, snack in between or for teatime. HEALTHY, FLUFFY, MOIST & SUPER DELICIOUS. Try it yourself and serve with nut butter, jam or cinnamon
INGREDIENTS โ€ข 2 flax eggs (2 tbsp + 6 tbsp warm water) โ€ข 2 tbsp brown sugar โ€ข 2 big orange โ€ข 1 grated carrots โ€ข 2 medium banana โ€ข 2 medium bananas โ€ข 2 cup gluten-free flour โ€ข 1 tsp baking powder โ€ข ยผ tsp salt โ€ข 1 tsp vanilla extract โ€ข 1 tsp cinnamon โ€ข ยผ cup finely chopped walnuts (optional)
INSTRUCTIONS
1 Combine grounded flaxseeds and warm water, allow to sit for about 5 minutes.
2 Finely grate the zest of one orange on to a plate and set aside, then squeeze the orange.
3 In a large bowl whisk the flax eggs and sugar and the grated carrots and orange zest.
4 Mash the banana with a fork and add it to the mix.
5 Add the flour, baking soda, salt, vanilla extract, cinnamon and whisk until completely blended.
6 Finally add the orange juice and the walnuts.
7 Preheat the oven to 180ยบC.
8 Bake in the middle of the oven for 45 minutes.
9 Remove the cake from the oven and leave it to cool in the tin for 10 minutes.

2 Cans Coconut Milk Low Fat
ยฝ Cup water (plus 3 T water for frying)
4 T green curry paste
2 T soy sauce
1 medium butternut squash peeled and cubed
2 small shallots, minced
1 cup green beans
1 cup edamame
1-2 cups of pre-cooked chickpeas
1 300g block of tofu, drained and cubed
Fresh lime juice
Handful fresh cilantro
1 cup broccoli florets

Mix 1 T soy sauce with 1 T curry paste.
Toss cubed butternut squash with the curry soy sauce mixture until lightly coated.
Heat 2 T water in a large frying pan. Add butternut squash and cover until squash is tender. Stir occasionally. Add water as needed.
Heat 1 T water in a large sauce pan. Add shallots and cook until transluscent. Add coconut milk, ยฝ C water, and the remaining 3 T curry paste.
Add tofu to the coconut curry mixture. Cook for 5 minutes.
Add green beans, edamame, broccoli, and chickpeas. Cook briefly until vegetables are slightly tender and brilliantly green.
Add spinach cook until wilted but not brown.
To serve, place butternut squash and brown rice in desired dish. Add the coconut curry and vegetables over the top.
Top with cilantro, chili slices, and fresh lime juice.
Enjoy!

Wonton Soup
Ingredients:
Vegan friendly wonton, 1 cup chopped mushroom, 1 cup cooked quinoa, 1/2 cup chopped yellow onion, 2 teaspoons "Better Than Boullion No Chicken Base" or 1 "Not Chick'n" Bouillon Cube 1/8 of olive oil, 2 tsp tamari sauce, 2 tbsp fresh chives minced, 1 tbsp minced garlic, 1 Tbsp fresh ground ginger, 1 tbsp rice wine vinegar, (optional) 1/2 tbsp jalapeno minced.

Broth:
1 TBS sesame oil,1 small yellow onion, chopped, 2 Tbsp fresh ginger, mined, 4-5 cloves fresh garlic, minced, sea salt for seasoning, 8 cups vegetable broth, Chili oil (optional), Minced green onion (optional). Instructions:
Wontons:
In a skillet on medium heat, add oil and sauteed mushroom and onions until softens. Add soy sauce, chives, garlic, ginger, rice wine, jalapeno, mixing to combine thoroughly. Taste mixture and season accordingly. In a food processor mix veggies with cooked quinoa until its a sticky paste texture. Seat In the middle of a wonton wrapper, add a heaping teaspoon of your vegan veggie mixture. Using your finger, moisten the edges of the wonton wrapper with water.Once the edges are moist, fold in half to create a half moon shape (circle wrappers) or rectangle shape (square wrappers). With your fingers again, moisten the bottom corners of the folded wonton and fold in half where the bottom corners meet.Place wontons on a baking sheet lined with parchment paper. Continue this process until all the filling is gone and set aside.
Broth:
In a pot on medium heat, add oil. Onceย oil is hot, add onion and ginger. Saute until onions are slightly translucent and fragrant, about 4-5 minutes. Add garlic and saute and additional 2-3 minutes.Add veggie broth, increase heat to high and bring to a boil.Once the broth starts boiling, reduce heat and simmer for about 15-20 minutes. Add 1teaspoon fresh squeeze lime juice and a pinch of salt.
While broth is simmering, fill a separate pot with water and bring to a boil. Add wontons and cook until they rise to the surface, about 2-3 minutes. Transfer wontons to a bowl with hot broth. Garnish with chilli oil, cilantro and avocado green onions. Serve hot.ENJOY!!!

I went to town on this dish for lunch today. Started with my garlic mushies and added tomatoes, blackbeans, shallots and avocado. Loads of flavour with added soy sauce and nutritional yeast and sunflower seeds. Scooped up with the crunchiest baked pita bread. Super yummo!

I will be the first to tell you that I used to eat a lot of junk: processed foods, fast food, energy drinks, you name it. I never thought about my health in the long haul and what I was doing to my body by eating those foods. I think in society we arenโ€™t taught to really look at food labels, how to eat right, and how to know what true quality food is. A lot of the time our food choices rely on taste, convenience, and social settings. A good rule of thumb to keep in mind is if you arenโ€™t feeling well, regularly getting fatigue, migraines, indigestion, acne, bloating, inflammation, or weight fluctuation, then you should definitely listen to what your body is telling you and stop ignoring those symptoms. Eating right for you body is key. Throw out the word โ€œdiet.โ€ Iโ€™m not even going to say that you should focus on having a good โ€œdietโ€... you shouldnโ€™t. You should focus on eating right for your body and listening to those needs. So many diets restrict food groups... restricting calories, carbs, sugars, whatever it is. But our bodies NEED those things. Fresh fruits, vegetables, healthy protein sources, and definitely adding those healthy fats like avocado and hemp seeds. Itโ€™s so important and vital for proper nourishment. Iโ€™m not saying that Iโ€™m perfect with how I eat by any means, but I do like to think that the foods I do consume are nourishing to my body (even if I do indulge here and there). Most importantly donโ€™t take this as a message to beat yourself up about how you are eating or have been. This is all about self love and doing whatโ€™s right for you, whatever that may be. ๐Ÿ˜

Hello lovelies! Iโ€™m so sorry for the lack of posting lately. With midterms quickly approaching, itโ€™s been one of those weeks that zooms by in a whirlwind of assignments and readings (and some non-food-related photoshoots. A lovely perk of a performing arts program๐Ÿ˜Œ)
There hasnโ€™t been much kitchen creating aside from overnight oats and meal prepping quinoa kale salads, but I did manage to whip up these chocolate banana protein cookiesโœŒ๐Ÿป

Koko, the gorilla who mastered sign language and showed the world what great apes can do, sadly has died.
She died Tuesday in her sleep at age 46, The Gorilla Foundation said in a statement. "Koko touched the lives of millions as an ambassador for all gorillas and an icon for interspecies communication and empathy," the release said. "She was beloved and will be deeply missed." She learned to communicate at a young age

The western lowland gorilla was born at the San Francisco Zoo in 1971 and began to learn sign language early in life.

She liked to read and be read to, a blog post by The Gorilla Foundation said. She purred at parts of books she particularly enjoyed.

She was very maternal toward kittens, and has had several throughout her lifetime. Her "tenderness" showed people how loving a gorilla can be, the foundation said.

She was said to have understood some 2,000 words of spoken English, and could usually keep up with conversations.

She taught the world about gorillas

The foundation says she has taught the world a profound amount about the emotional capacity and cognitive abilities of gorillas.

The foundation will continue its work on conservation and preservation of gorillas with continued projects, including a sign language application featuring Koko.
