Happy Aloha Friday everyone 🌺Another comfort food dinner comes in a form of a veggie chow fun😁 The best part about a stir fry noodle dish is that you can add as much veggies as your heart desires, and you can have dinner ready in 15 minutes or less, depending on your chopping skills 😬
1 Tbsp cooking oil
1/2 onion, sliced
8 oz oyster mushrooms (or any mushrooms), chopped or sliced
1 inch fresh ginger, peeled and cut into thin matchsticks or minced
3 cloves garlic, cut into thin slices or minced
1 large carrot, peeled and cut into thin slices
1/2 napa cabbage, shredded
1 bunch mustard greens, chopped
1 pound store bought wide chow fun noodles
1 bunch of scallions (green part only), chopped
1/3 cup soy sauce
2 Tbsp sesame oil
1 Tbsp rice vinegar
2 Tbsp pure maple syrup, agave or sugar
Whisk sauce ingredients in a small bowl and set aside.
1️⃣Preheat a wok or a large non stick pan to high.
2️⃣Add cooking oil, followed by the onions. Stir constantly, to not let the onions burn. Add mushrooms and continue to stir constantly for about 1 minute. Add ginger and garlic and cook another 30 seconds, stirring constantly. Add carrots and continue cooking on high for 1 minute, keep stirring. Add the shredded cabbage, mustard greens, noodles and sauce and continue to cook on high, tossing everything together with tongs, until the greens are wilted, the sauce thickens, and everything is nicely coated, about 1-2 minutes.
3️⃣At the very end of cooking, add the chopped scallions, toss a couple of times and turn off the heat. Transfer to a serving dish and enjoy!
