~ Cheesecake crudivegano de lima y coco ~ Me alucinan los dulces crudos y ésta tarta de lima crudivegana en especial. Además de no llevar cocción, es vegana, sin azúcar refinada, libre de gluten y con un gran aporte de grasas saludables.

Para preparar ésta delicia, necesitarás:
3/4 taza de anacardos (cashew o castañas de cajú) remojados toda la noche
3/4 taza de dátiles, en lo posible medjool por que son más tiernos
1/2 taza de almendras
2 1/2 taza de coco disecado
2/3 de taza de zumo de lima
2 cdas de cáscara de lima rallada + un poco para decorar
2 cdas de aceite de coco
1/2 taza de leche de coco (lata)
3 cdas de sirope de arce u otro sirope

Remojar los anacardos (cajú) toda la noche en agua o un mínimo de 5 a 8 horas.
A la mañana siguiente, enjuagarlos bien con agua.
Colocar los dátiles en agua en remojo unos 15 minutos.
Escurrir el agua y mezclar los dátiles, junto con las almendras y el coco disecado, en un procesador de alimentos, hasta que quede una textura fina.
En un molde de 20 cm colocar la base, presionando con los dedos hasta que quede uniforme y compacta.
Llevar a la nevera mientras preparas el queso.
Colocar en el procesador o batidora, los anacardos (cajú), el zumo y la ralladura de lima, el aceite de coco, la leche de coco y el sirope de arce. Mezclar bien hasta que la mezcla esté suave y cremosa.
Verter el relleno cremoso sobre la base, esparciendo uniformemente y espolvorear con ralladura de lima.
Llevar a la nevera para que se solidifique y retirar unos 30 minutos antes de servir. Enjoy 😘

THE BUDDHA BOWL:
1 Cup Quinoa rinsed
2 Cups Water
Chickpeas
1 1/2 Cups Cooked Chickpeas
Drizzle Olive Oil or other neutral oil
1/2 Tsp Salt
1/2 Tsp Smoked Paprika
1 Tsp Chili Powder
1/8 Tsp Turmeric
1/2 Tsp Oregano
Red Pepper Sauce
1 Red Bell Pepper ribs and seeds removed
2 Tbs Olive Oil or other neutral oil
Juice from 1/2 Lemon or more to taste
1/2 Tsp Pepper
1/2 Tsp Salt
1/2 Tsp Paprika
1/4 Cup Fresh Cilantro
Everything Else
Mixed Greens
An Avocado
Sesame Seeds for Garnish
Instructions
Start by cooking the quinoa. Bring 2 cups water to a boil, then
add quinoa. Simmer for about 15 minutes until all water is
absorbed. When done, remove from heat and keep covered for
about 10 minutes so quinoa can absorb any excess water.
Preheat oven to 425. In a bowl, toss chickpeas, oil, and spices
until chickpeas are evenly coated. On a baking sheet lined with
parchment paper, bake chickpeas for 15-20 minutes, or until
desired doneness is reached. When done, remove from oven and
let cool.
To make red pepper dressing, add all dressing ingredients to a
blender (not a food processor) and blend on high until smooth.
Taste, and adjust seasonings to your preference.
Finally, assemble the buddha bowls. In two bowls, add quinoa,
mixed greens, avocado, and chickpeas. Drizzle everything with
red pepper sauce, and sprinkle with sesame seeds.

Veganuary day 17 we eat Vegan burger. I never tried any sort of vegan burger in my entire life. The closest thing to a vegan burger that I knew and tried was Falafel, which obviously isn't a burger at all. So I did a bit of research on it and went down to a YouTube rabbit hole AND discovered tones of verities. Now here is the thing: I have a strong resistance against any sort of vegan food, that claims to taste like any kind of meat or animal product AND I don't eat any kind of food with ingredients unfamiliar or unknown to me. I was looking for something simple and not soy based. So I took some ideas from YouTube and developed a recipe for this butter Beans and Bulgur burger with Tahini dressing. It's still in testing phase but I'll share the final recipe with you some time soon. .

Sirve: para 2 a 3 personas
Ingredientes:
3 tazas avena
1/2 taza fécula de maíz
1 cda chia
2 cdas cacao
Pizca canela
2 plátanos maduros
2 cdas crema de almendras
1 3/4 taza leche de almendras
Licuar todo hasta que sea cremoso. Calentar un sartén y vertir pequeñas porciones de masa al sartén. Cocinar de los dos lados y listo. 🎉
