♥️ Zutaten:
.
• 4 EL Dinkel-Vollkornmehl
• 1 EL Speisestärke
• 1 geh. TL Weinsteinpulver
• 1 EL Agavendicksaft, hell
• 2 EL Raps- oder Sonnenblumenöl
• 9 EL Haferdrink, ungesüßt
• 2,5 TL gemahlene oder zerstoßene
• Leinsamen + 3 EL heißes Wasser
• 1 Tafel Schokolade, Kakaogehalt 70%

Zubereitung:

Alle trockenen Zutaten in einer Tasse vermischen.
Die Leinsamen (entweder z.B. im Mörser zerstoßen oder in der Küchenmaschine fein mahlen) mit dem heißen Wasser verrühren und 5 Min. quellen lassen.

Im Anschluss Leinsamen, Öl und Agavendicksaft zu den trockenen Zutaten geben und verrühren.
Mit einem scharfen Messer Schokoladensplitter von der Tafel abschneiden und unter den Teig rühren.
In der Mikrowelle bei 700 Watt ca. 2,5 Min. backen ♥️

~Vegan Chocolate Chip Cookie Dough~

1/2 cup Oat Flour
1/4 tsp Vanilla Extract
1 1/2 tbsp Maple Syrup
1/4 cup Mashed Banana
1/4 cup Non-Dairy Milk
Pinch of salt
Handful of chopped chocolate or vegan chocolate chips!

Mash banana and mix everything together in a bowl, or blend everything except for the chocolate until smooth, then stir in chocolate chips and enjoy!

Just some mid-day snacking... Avocado and hummus on homemade quinoa crackers. .
1 cup @gogoquinoa quinoa flour
+ more for rolling
1/4 tsp salt
1 tsp coconut oil (melted)
6 tbsp warm water
.
Set oven to 350F. Line a baking sheet with parchment paper And sprinkle with some quinoa flour.
Mix together quinoa flour and salt. Creat a well then add melted coconut oil and warm water, stirring until combined.
Sprinkle some quinoa flour on a flat surface and on a rolling pin and roll out the dough. Cut the dough into desired shapes. Sprinkle some salt, and gently press it into the dough.
Transfer to the baking sheet and bake at 350°F for 25 mins.
Gently move them around and put them back in the oven for another 10 minutes.
Let cool completely to room temperature on the baking tray. Store in an air tight container.

~Roasted Cauliflower Salad~

...For the Cauliflower...
1/2 a head of cauliflower
1 tbsp olive oil
1 tsp ground cumin seeds
1 tsp ground coriander seeds
1 tsp garlic powder
1/2 tsp cinnamon
Mix everything together then bake at 350F for 30-45 minutes flipping half way. Remove from the oven and leave to cook.

... For the Dressing...
1/4 cup tahini
1/2 a lemon
1 tbsp olive oil
2-4 tbsp apple cider vinegar
Mix everything together.

..For the Salad...
The cooked Cauliflower
The dressing
1 bag of mixed greens
1 cup of cooked grains (I used @gogoquinoa puffed quinoa)
Mix everything together and serve :)

Vegan, Gluten Free, Banana Chocolate Chip Muffins

* Ingredients •

2 Bananas
3/4 cup + 2 tbsp Almond Milk
1 tsp Apple Cider Vinegar
1/4 cup Maple Syrup
1 tsp Vanilla Extract
1/4 cup Coconut Oil (melted)
2 cups Spelt Flour
5 tbsp Coconut (or cane) Sugar
2 tsp Baking Powder
1 1/2 tsp Cinnamon
1/2 tsp Salt
1/2 tsp Baking Soda
1 Package of Chocolate Chips @enjoylifefoods

* Directions •

Preheat oven 350°F & line a muffin tin.
Melt coconut oil & set aside. Mash bananas, then add to a bowl with the remaining wet ingredients (not coconut oil). •
In a large bowl mix dry ingredients.
Once cooled mix coconut oil into the wet mixture. Pour wet ingredients onto the dry ingredients & stir (do not overmix).

Fold in chocolate chips then fill muffin papers 3/4 full. Bake at 350°F for 25 mins. Let to cool in pan for 5 to 8 mins then transfer muffins to a cooling rack & cool for another 15 mins.

Chocolate Baked Oatmeal!!!

1/2 cup Rolled Oats
1/2 a Banana (mashed)
2 tbsp Almond Milk
1 tbsp Maple Syrup
1 tbsp Cocoa Powder
1-2 tbsp Peanut Butter
handful mini chocolate chips for the top!

Preheat oven to 380 F. Mic all ingredients then pour into a greased ramekin. Bake for 20 mins then broil for 3 minutes (watch carefully!!). Top with mini chocolate chips and more peanut butter!!

Careful the plate is hot af!!

When you love coconut desserts that much, you HAVE TO taste this brownie.
It is creamy, raw and without added sugar- what more could you ask for? 😋

Recipe:
5 tbsp coconut flour
6 tbsp raw cocoa
cooked sweet potato ( around 200-250 gr)
3 big tbsp sesame tahini
handful of cranberries
honey
coconut flakes

After you mix all of the above, place them in a cake tray, and put the topping- mixed coconut flakes and honey. You can also add coconut butter.
Leave it the fridge to cool overnight, and use strawberries for a full culinary experience. 🍓🍓🍓

Lately I've been so obsessed with these #energybars , that I literally stopped buying sweets from the store. Which is great, by the way 😇
It's easy, simple, quick and so tasty! - dates
- nuts of choice ( I usually put walnuts) - coconut flakes
- some ginger
- raw cocoa
- optional: raisins, berries, sunflower nuts, chia.
Blend all well, form in any kind you want, wrap them in foil and put in the fridge.
You then have ideal snack for the next couple of days. 👍🏼 ...................................... Is there anything different that you add to this combination? Any tips? 😋

•Ingredients•
3-1/2 cups Spelt Flour
1/3 cup Coconut Palm Sugar
2 -1/2 tsp Baking Powder
1/2 tsp Baking Soda
3/4 tsp Sea Salt
1/3 cup Coconut Oil
6 tbsp Unsweetened Apple Sauce
1/2 cup Fresh Cranberries
1/2 cup Dried Apricots (Chopped)
1 cup + 1 tbsp Almond Milk
1 tbsp Lemon Juice
🍽️
•Instructions•
Preheat oven to 375ºF. Line a large baking sheet with parchment paper and set aside.
——
Mix 1 cup of almond milk and lemon juice and leave for 5 minutes. This is your "buttermilk".
——
In a bowl, combine flour, sugar, baking powder, baking soda, salt, coconut oil and apple sauce. Use your hands to combine all the ingredients to form a loose dough.
Stir in cranberries and apricots. Pour in the "buttermilk" and stir until incorporated.
——
Gather the dough into a ball, then transfer to a lightly floured workspace. The dough will be wet. Lightly flour the dough and flatten the ball into 3/4 inch thick circle and cut into 8 triangles. ——
Transfer the scones to the baking sheet and brush with the remaining 1 tablespoon of almond milk. Pop the scones into the oven and bake for about 20 minutes or until lightly golden.
——
Leave to cool then enjoy! Best eaten the first day.

Pesto Pasta

[Cooked Pasta]
1 cup Basil
1 cup Spinach
1/4 cup Water
1/4 cup Nutritional Yeast
1/4 cup Lemon
1/4 cup Cashews

Blend all but cashews until smooth, adding lemon as needed (you don’t want it sour). Add cashews at the end and blend to desired consistency.

Pour on pasta and stir to incorporate.

Serve warm or cold.
