Red Velvet Cupcake from @hummingbbakery ... sponge was pretty tasteless but I wouldn't know what a non-vegan Red Velvet one should taste like. But that butter cream was horrible in my opinion - very weird buttery flavour. Will have to keep baking my own cakes.

Got my first vegan cookbook! It has some simple recipes, some more advanced recipes as well as a large number of sharing plates! I've used it quite a lot already and it has been very useful! Would definitely recommend to someone who isn't very good at cooking and wants to improve 😊

Spent my 30th birthday today visiting my newly adopted boo Jude🐮at @hopefieldanimalsanctuary ♥️She has a strong inclination for slobber filled licking(as you can see)😆we had such a fun afternoon visiting all the animals and it only took a little under an hour to get out there from North London!🌅

I love my thrifted corduroy blazer ♻️ Thrift shops stop beautiful pieces from ending up in the landfill and clogging oceans & wildlife. It’s just as beautiful as a £80 brand new blazer from Zara, unfortunately bulk made through exploited workers & child labourers. I remember I was so shocked when I learned that bulk made items from fast fashion are usually burned because our landfills are already full 🤯 Its nice to buy from somewhere that makes a difference 🌿🌍

Would you look at that! They’re exactly the same! 💁🏻‍♂️💁🏼‍♀️ Whether you’re male or female the formula for achieving a strong, healthy and lean physique is exactly the same. Let’s go back to basics 💪🏼 To build muscle & strength - work your muscles with resistance training. This can be done by using weights or even doing bodyweight exercises, no need to get a gym membership if you don’t want to. Also you’ll need to eat the right foods and the right amounts to build muscle, more on that later.

To burn fat and become leaner - this comes hand in hand with resistance training. The more muscle you have the leaner your physique will look assuming you keep your body fat at a healthy level. Also your metabolism is faster and burns more fat when you have more muscle so resistance training helps to control your weight to a certain extent. Eating healthy nutritious foods in a calorie deficit will help shed fat from a food perspective.
Become healthier in general - all of the above, plus you should be working your heart and lungs out! Your cardiovascular system needs to be worked and is definitely the most important thing you should account for in your fitness journey. It’s not all about getting ‘ripped’ or ‘shredded’. It’s easy to forget about your heart, but to avoid health issues further down the line and live a long healthy life, make sure you start moving to get your heart rate up. That can be done through so many different things so there’s no excuse. Walking, cycling, gymnastics, yoga, hiking, ecstatic dance, rugby, football, HIIT, you name it..! Do what makes YOU feel good and fit.

Finally, get some rest! Sleep, take a break from working out. You know your body.

This is all the simple stuff that will help to build the body you want, but on top of that comes the nitty gritty that only you can dig deep down to harness. I’m talking about the dedication, discipline, conviction, intensity of your workouts, consistency of you eating habits & workouts, your hunger and your tenacity to get things done. Combine all of them and you’ll look back and wonder who you actually were before your transformation. Not just physically but mentally as well.

My kind of comfort food, quick to make (20mins 😉) and oh so tasty!

Seasoned buckwheat salad (not a fan of GF pasta so buckwheat is my go to substitute), baked wedges and my no nonsense hummus.

Hummus recipe:
Can of chickpeas, 4 tablespoon tahini, 1 tablespoon olive oil, sea salt to taste (start with 1/2 teaspoon), zaa'tar (Middle Eastern spice mix), 1/4 lemon juice and a couple of tablespoons of water (depending on your preferred consistency you might want to add more.)

In other news have had a bit of a roller coaster couple of days. Yesterday I crashed emotionally and had a pretty rough morning. Not going to lie the need of #thyroidcancer recurrence has been mega difficult (after 4 years and still dealing 😒) and having to decide my next course of treatment and having issues about everything else in my life ⏳has been pretty overwhelming & well I just crashed...thankfully I have tools in place such as meditation,🧖‍♀️ sauna, yoga, rebounding and the support of my friends & family ....but admittedly things can turn into a pretty dark place pretty quickly... .
This is why I always stress the importance of calming, soothing things like yoga 🧘‍♂️ and meditation...likewise and I’m talking 🗣 to you fellow vegans #B12 & #vitaminD is sooooo important guys!! These are absolute supplemental necessities for us...I use an amazing spray of both by @betteryou_ltd which has been a life saver. These essential vitamins switch on the happiness buttons in our 🧠 ....

I have to admit, I felt a bit embarrassed asking for fish and chips (vegan, of course) at @eatchayclub , but they’ve managed to make their version that little bit special with small touches, such as dill, chillies, seaweed and tartare sauce. The vegan fish has a very distinctive flavour; if I had not ordered from this 100% vegan place, I would have had to double check!

Daylight savings time has me in a rut. Or is this because of the premature cold snap in MN? Either way, it has me tired, cranky and a tad lethargic.

All I want to do is lay in bed, read, cuddle and not shower 😉 I just picked up Girl Wash Your Face by @msrachelhollis . Already it has me grinning and eager to read page after page.

Tried @eat_oumph at @veganlife_live a couple of years ago - before it was in the shops - and didn’t get round to actually buying any. Until now!

And. Um. It’s a thumbs up from me. Delicious... Meat replacements just keep getting better and better. My current front runners: Oumph, of course; the @vegetarianbutcher and @vivavivera.
Anywho. It’s ok to replace salad leaves with coriander, right?
