Really getting into the fall mood with these tarts. The crust is dark chocolate with nuts and the filling is a mixture of raspberries, red currants and golden berries.
To make the based you will need: • 2 cupsof almonds •8 pitted dates •1/2 cup dark chocolate •pinch of sea salt •1 tsp maple syrup •1/4 tsp water
Pulse all base ingredients in a food processor until a sticky crumble forms. Press into tart 4 moulds. Set in fridge and prepare filling.
For filling: •1/4 cup red currants
•1/4 golden berries
•1 cup frozen raspberries •1 cup of coconut cream •1 cup almond milk
Blend these ingredients in a high speed blender for 1-2 minutes. Strain the ingredients over a pot, discarding all chunks. Heat the liquid over medium heat. Add into the pot when warm: •1 1/2 tsp agar agar powder •1/2 tsp Madagascar vanilla •2 tbsp maple syrup
Stir well until ingredients have all dissolved. Strain mixture again before letting cool. Cool and transfer cool mixture into tart shells. Pace in the fridge until mixture has solidified. Top with piped chocolate mousse, (recipe a few posts back or in blog), more golden berries, raspberries, currants, dark chocolate and other favourites.

Happy humpday IG lovelies 🌿
This is one of the favourites at work! My Moroccan tagine. Sweet and spicy (like me) haha I’ve made that joke too much for it to be funny anymore. Joking aside, one of my biggest achievements is to have meat eaters try and even like my food. Like, I’ve cracked the vegans and veggies now for the harder audience 😅 to me food is about good ingredients and enjoying the textures, aromas and flavours. Yes you’ve gotta be a bit more creative working with plantbased ingredients but the thing I love most is that everyone can enjoy it 😊 !
In my tagine was: organic roasted seasonal squash, aubergine, red peppers, fresh ginger, garlic and onion, organic butter beans, raisins, goji berries (cuz I was feelin bouji), tinned tomatoes, salt, pepper and all the yummy spices. So we had, turmeric, cumin, cayenne pepper, nutmeg and cinnamon 👌🏻 and it was served with organic lemon-Infused quinoa. PINK PITHAYA CHIA PUDDING 💗
♡ 5 + 1/2 tbsp chia seeds
♡ 1-2 tbsp sweetener of choice
♡ a pinch of sea salt
♡ 1+1/2 tbsp @rawnice pink pitaya powder (➡️ use code 'nourishing.andreea' to get it with a 15% discount from their website)
♡ 290 ml milk of choice
♡ 1 tsp vanilla extract

Add all ingredients into a jar, mix well and let it sit in the fridge over night. Take it out, mix it again, layer and enjoy. 😉😋

Overnight (gluten free) oats with steamed apples 👉🏻Blend 1 🍌 2 cups almond milk, 1 date, tspoon cinnamon, tspoon all spice. Place in container and add 1.5 cups oats, stir through and refrigerate overnight. Slice 2 apples and steam or poach until soft. Allow to cool down. Use 1/2 cup of overnight oats, top with apple, raisins and sunflower seeds.

Sauté 1/2 red onion in grape seed oil, stir for a few mins. Add tspoon cumin seeds, tspoon turmeric, tspoon garam masala, 1/2 tspoon cinnamon, stir until fragrant. Then add handful of sliced mushrooms, 1 cup cooked chickpeas, 1 cup cooked sweet potato. Stir for a few mins until mixed together and coated in spices. Season with Himalayan salt, pepper, cilantro, dried figs. Serve with falafel. Salad👉🏻Butterhead lettuce, snap peas, green pepper, 🥕 🍅 dash of avocado oil, sunflower seeds.

[RECIPE] // Chai-spiced banana muffins💫

Ingredients🍌
(makes 15 small muffins)
~
1 dl oat flour
1 dl flour
1 dl spelt flour
2 tsp baking powder
3-4 tbsp coconut oil (melted)
2 tbsp sukrin gold (or brown sugar)
1 tbsp honey
2 tsp cinnamon
1/2 tsp lebanese 7-spice mix (nutmeg, black pepper, cloves, cinnamon, ginger powder & cardamom)
2 mashed ripe bananas
1/4 sweet potato (roasted)
1-1,5 dl almond milk
2 tbsp peanut butter
a handful cranberries
**for vegan sub honey with maple syrup

How:
1. Preheat oven to 190 degrees
2. mix all dry ingredients in a bowl
3. melt coconut oil and add to the bowl
4. mash bananas + oven-roasted sweet potato & mix it into the dough
5. add the rest of the ingredients and blend it all together
6. pour into small muffin tins and top with a small piece of banana
7. bake for 20-25 minutes & let cool
8. enjoy!💞

A quick delicacy with a thin base, topped with homemade hummus, tomato sauce with bell peppers and bits of hummus. To make it spicy. I added chilli flakes in the tomato sauce and before putting in the oven, I topped the pizza with chopped green chillies😈. .

Estas son casi todas las semillas que tengo. Las conseguí mediante trueque, en viajes, algunas compradas, regaladas, algunas que yo misma he sacado, etc.
Tengo una cajita pequeña con compartimentos que me regaló mi pololo para que cuando viaje siempre la lleve, por si encuentro semillas las vaya recolectando ahí. Más lindo💚
Es muy importante recuperar semillas nativas y ancestrales que no sabíamos que existían.
Hay muchas empresas que anhelan la disminución de semillas nativas y criollas para la producción de monocultivos en post del negocio exitoso modificando genéticamente las semillas y privatizándolas.
Las semillas son un elemento que sostiene la vida. Sin semillas no pueden haber pueblos, ni personas, ni cultura. Si las destruimos, hacemos lo mismo con nuestras vidas. Son un elemento sagrado que debe ser compartido como lo dicta la naturaleza.

🧡Microwaved Sweet potato 🍠 with mashed avocado 🥑 & some seeds.
I wasn’t going to post it, but it’s so simple & easy (& tasty)... and perfect for dinner/snack that I just HAD to 🤗
It’s more like: let’s bake a sweet potato and top it with one of my favorite things 😂😅 (apart from peanut butter of course)
Preparation:
▶️ Pierce sweet potatoes several times with a fork. ▶️ Microwave for 8 minutes
▶️add your favorite ingredients: mashed avocado with lemon juice is my fav😋, but you can also add guacamole, some veggies, mushrooms, textured soya.
▶️add some seeds: hemp seeds and pumpkin 🎃 seeds in my case.
Let me know if you tried it, one of my favorite snacks without doubt 🤤.

The recipe for this Mushroom Risotto is now up on the blog! When I made it this time, I wanted to jazz it up a bit so I was experimenting in the kitchen and playing around with king oyster mushrooms. I found that when panfried, they developed a nice caramelised taste and the texture was much like squid. It’s a fun little addition to the dish, check the link in bio for recipe.

Creamy cheesy mushroom 🍄 & pine nut saffron pasta. Very filling 😋 🤤
Ingredients ✒️ (6 servings approx)
5 large mushrooms sliced
1/4 cup pine nuts
Olive oil
👩🏻‍🍳
Sauté mushrooms in olive oil (2 tsp) until cooked. Set aside.
Pan fry pine nuts in 1tsp olive oil. Set aside.
✒️
1 bag of your preferred pasta. Cook pasta 🍝 as per norm. (Water, salt and olive oil) @sanremopasta ✒️
For the sauce:
1/2 cup plain flour
1tsp saffron powder
2.5 cups of plant milk 🥛 (I used @pureharvest)
75g plant spread (I used @nuttelexspread)
1/4 cup nutritional yeast
Salt to taste
👩🏻‍🍳
Melt plant spread in a saucepan over medium heat. Add flour, stir until mixture bubbles. Add saffron and gradually stir in milk, keep stirring or it will clump. Add nutritional yeast.
Keep stirring until it boils.
NB, if sauce is too thick add more milk until it’s a consistency you can enjoy with your pasta 😉
👩🏻‍🍳
Combine pasta, mushroom, pine nuts and sauce in a bowl and garnish with chopped parsley.
Tip, don’t not be rough as pasta will mush and break.
Enjoy 😉 x
